Toward Fresh Cranberries
Cranberriei are back and
everybody's got them. And at
the lowest prices ever noted
by this reporter. That's be
cause nature went to work in
the interests of c r a n berry
growers; rolled up a majority
of sunshine and rain; grew
berries bigger and better.
West coasters have been
growing and eating cranber
ries ever since Lewis and
Clark thoughtfully transplant
ed them to the marshy coastal
regions of our Pacific North
west. We pictured our vote-getting
fresh cranberry and rais
in cake and give recipe else
where in our columns today.
Here are other ways with
these red, ripe, fresh, dark
beauties.
Cranberry sauce and cran
berry jelly are such old stand
bys that we're not even going
to mention them. Cranberries
are prize winners as an in
gredient for turkey stuffings.
They make a distinctive cock
tail when juiced and spiced
with cloves and cinnamon.
They give zest to a meal
in relishes, ices, fruit salads,
fruit molds and in many com'
binations with apples, oranges
and other fruits. Fresh cran
berry nut bread is highly re
garded. They go into pies,
puddings, tarts; combine with
apple in a cobbler.
Relish Repeat
We remind you of the all
time popularity of this recipe
for Cranberry Relish:
Recipe requires only one
pound of fresh cranberries,
one orange and one cup of
sugar. Quarter the orange and
take out the seeds but us
both pulp and skin. Grind th
raw berries and orange peel;
add the sugar, mix and place
in covered jar in refrigerator.
This will keep for two or
three weeks but it is unthink
able that it won't be con
sumed long before that.
Spiced Tomato Bouillon
This spiced tomato bouillon
Is a zesty refresher as snack
or mealtime first course.
Serve with saltines or other
favored crackers.
Dissolve two beef bouillon
cubes in two cups boiling wa
ter; stir in one cup tomato
juice and dash of ground
cloves. Heat to boiling point;
serve with lemon slices for
garnish.

Tuna and Corn Soup
Here's a tuna and corn soup
recipe to have ready and
waiting for a slight simmer
while you finish up your pre
cinct work or to have at hand
for late voters or election re
turn watchers. Eight servings.
2 tablespoons butter or
margarine
1 cup chopped onions
IV cups chopped celery
4 cups tomato juice
2 cups stork or bouillon
1 teaspoon salt
V teaspoon pepper
2 teaspoons sugar
1 teaspoon basil
1 10 ounce package frozen
whole kernel corn
2 7-ounce cans tuna
Melt butter or margarine.
Add onions and celery and
cook over low heat, 10 min
utes. Add tomato juice, stock
or bouillon, salt, pepper, sug
ar, basil and corn; mix. Cover
and cook over medium heat
20 minutes, stirring occasion
ally. Add tuna and return to
simmer..
Dairy Sour Crtam
Topi Lamp Chops
Put this combination of
broiled lamb chops with dairy
sour cream sauce on your
mealtime ballot for enjoying
now, repeating later. There's
plenty of lamb, plenty of dai
ry sour cream; both enjoy
tremendous popularity; make
a fine twosome. Six servings.
6 lamb loin chops, cut
1-inch thick
Salt and pepper
Vi pint dairy sour cream
W cup chopped parsley
2 tablespoons chopped
chives
1 teaspoon Worcestershire
sauce
Salt and pepper to taste
Sprinkle lamb with salt and
pepper. Broil lamb three to
four inches from source of
heat, five to seven minutes on
each side or to desired degree
of doneness.
Meanwhile, combine re
maining ingredients; cook
over low heat, stirring con-stantly-not
more than three
minutes. Serve sauce with
lamb chops. A spot of curry if
family likes curry.

ple will drink more coffee,
more tea and other beverages
during the next few days and
nights than at any other time
throughout the year. So put
in plentiful supplies of both
along with other favored bev
erages of family and friends
and some carbonated bever
ages for the children and
teenagers.
Instant coffee is a good buy
and a great convenience when
you're likely to be stirring it
up any time of day or night.
It can be made in the cup if
you're grabbing a fast one,
but actually is far superior
when made in quantity in a
pot.
Remember to have plenty
of coffee cream for coffee
drinkers, lemons tor tea
drinkers. Patriotic designs
and appropriate red, white
and blue paper napkins are
readily available at stationers.
Make a fancy desert or two
or three or buy coffee cakes,
cupcakes, petit fours, assorted
cakes or cookies. Thin slices
of fruit cake served with
cheese cut in parly motifs,
elephants and donkeys, are a
good idea.

Meat. Good supplies of lamb
at reasonable pricei. Stock up
now on lamb If you have a
home freezer. Bargains in
stewing beef and pot roasting
cuts as well as In minute
steaks and hamburger. Veal
is at its best and a trifle lower
in cost. Ham, bacon, sausage
and processed meat are good
pork buys.
Fiih and Shellfish. Vary
menus. Take good look at lo
cal displays of fish and shell
fish. They reveal Dungcness
crabs, fish sticks, flounder,
halibut, rcK-kflsh, salmon,
scallops and shrimp with
more varieties over in the
frozen and canned foods sec
tions. Vegetables, Fruit. Abund
ance of broccoli, green cab
bage, carrots, cauliflower, cel
ery, corn, cucumbers, onions,
eggplant, peppers, winter
squash varieties, tomatoes,
sweet potatoes. Fruit displays
offer fine apple variety, ba
nanas, cranberries, grapes,
pears, some melons, persim
ons, pomegranates.
Frohnmayer Named
To U of 0 Fund
Eugene-Otto Frhonmayer,
Medford attorney and Univer
sity of Oregon alumni, has
been named second vice presi
dent of the University devel
opment fund.
Both the reorganization of
the fund and election of offi
cers took place here at the
recent Homecoming celebra
tions. President of the Fund
is Donald Slocum, Eugene
orthopedist.
The reorganizing of the
fund, a non-profit corporation
organized by alumni, and
friends of the university for
the purpose of chaneling gifts
to the school, is the result of
a study made by nation-wide
experts in the field.
Reconstitution of the fund's
board of directors was sug
gested to incorporate on it all
constituents, such as faculty,
students, alumni, and non-alumni.
