Feeding the Family
By ZOLA VINCENT
Food Editor
Hall, Hoarly Frankfurters
on Woolc End Menus
The hall and hearty frank-
furlcr in u tremendously popu
lar Item for n long week end;
Is one of our very best buys.
It's little wonder that this
special meat Item enjoys such
popularity for It can bo com
bined with many other dclic
Ioiik foods.
Most frankfurters will wind
up In the popular "red hots"
with broiler franks running a
close second. Other favored
wajn, designed for fork eat
ing, are tiiesc:
Try franks baked with a
stuffing of mantled potatoes,
rated cheese and onion.
Another good down-to-earth
dish Is sauerkraut topped
llh franks and healed to
tangy goodness.
Surprise friends and family
with a late evening snack of
hot franks In buns topped
I th a sauce made from three
parts cranberry sauce and one
irt horseradish.
The renlm of the casserole
finds sliced franks adding
wonderful flavor and solid nu
trition to macaroni and
cheese, to canned baked beans
and to scolloped potatoes.
Skillet specialty for four
persons comes to table In
klllet. Slice three medium
tomatoes one-half inch thick
Into skillet. Top with thin
slices of one onion a. id strips
of one green pepper. Slice
six franks In half, first length
wise, then slanchewisc and
place on vegetables. Cover
nd cook slowly about 13
minutes. Sprinkle one cup
shredded cheese over; salt and
pepper, then cover. Turn off
heat. Cheese will melt
Everyone will like.
Many Malon Ways
Our west coast s long grow
ing season brings ambrosial
melons for pure pleasure any
time from morning "eye-
opener to midnight snack.
Quality cantaloupes arc pour
ing into local markets. Casa-
bas, Cranshaws, honeydews
and Persians beckon. Water
melons will be on practically
every shopping list, ready for
chilling, rhapsodizing.
Most melons will be chill
cd, cut into halves or half
moons, seeds removed and
served with lemon or lime
wedges andor sprinkling of
salt.
Melon Cup. For each serv
ing, fill cantaloupe half with
seasonal fruits and berries.
For exli-a special, lop with
scoop of any flavored sherbet.
Sweet Cherries
Picnic Perfect
Favorite way of serving
cherries Is by the handful.
They're perfect for picnics
and snacking. So easy to fix
and to carry; tempting, re
freshing, delectable.
Luscious cherries also are
wonderful in salads, desserts
nd sauces. Season is very
ihort so make the most of
.hern right now. Sweet cher
ries should be kept in a cool
place; ideally in plastic bags
the refrigerator. Do not
wash until ready to use.
Holiday Cold Cuts
Cold cuts will come in
mighty handy over the three-
day holiday so It's a good idea
to put in a supply of these
popular delicatessen meals
along with favored canned
meals.
Cold Cuts Platter. On a
plntlcr, arrange attractively
ix variety of cold cuts such as
salami, thuringer and spiced
ham; garnish with ripe and
green olives and cubes or
fingers of cheese.
Supper Salad. Noon or eve
ning, lightly rub a large salad
bowl with garlic. In it, place
lettuce or a mixture of salad
greens. On one side, lay strips
of summer sausage, bologna
and pcppcronl. Down the cen
ter arrange alternate tllces of
hard -cooked egg and diced
tomato. Serve wi(h salad
dressings on side for Indi
vidual choosing.
Rainbow Bowl
Fill chilled, peeled canta
loupe halves with balls or
cubes of cantaloupe, honey
dew or watermelon; offer as
salad with French or fruit
salad dressing.
Rainbow bowl dessert
course dc luxe for a large
party finds watermelon half
hollowed out; refilled with
assorted melon balls or cubes,
sprigs of mint. Now add Ice
cubes made of lemonade, lime
ade or ginger ale for further
glamour, added flavor.
Shop Early, Enjoy Long
Week End Ahead
We urge you to plan ahead
and to shop early to avoid
the holiday rush if you can
possibly do so. Many of our
good friends and .leighbors
simply cannot do this because
ol small children, lack of car
availability or because the
family shopper works else
where.
Market supplies in all fresh
produce departments arc best
early in the day, dispositions
are best before crowds and
fatigue set in . . . and that
checking counter line is so
much shorter. Treat yourself
and others to more leisure,
relaxation by your thoughtful
consideration.
Week end plcntifuls appro
priately include all of the
picnic foods and this will con
tinue throughout the sum
mer. Put In plenty of pape
products that save time, en
ergy, labor both indoors and

Meat Situation Good. Best
buys include turkeys of all
sizes from 4 pounders to 25
pounders. Bigger the turkey,
the lower price per pound.
They're ideal for family and
other large gatherings with
second and third day eating
even better than first day. If
turkey isn't planned, there's
certain to be at least one
fryer-broiler meal and many
will plan for hot fried chicken

burgers will be high in popu

foot or more above him. He
senses the fact that very soon,
after a heavy rain, his run
ways and passages will be
filled with water. He feels
the chilly dampness. He has
nothing to fear from the
cold, he is insulated against
that, but the water may flood
his sleeping chamber.
If the flood becomes too
great, it may force him above
ground. In that strange, up
per world he would be help
less. He must have the close
pressing of the earth on his
body. He must have sand in
his tiny, almost totally blind
eyes, but it matters not, for
there is never anything to
see in the land of the "always
night."
His is a world of silence.
His horizon is never over an
inch beyond his sensitive
nose. A capricious Nature rel
egated him and his kind, ex
cept the shrews, to live their
little mundane lives in
strange environment below
the earth's surface, working
always in gritty darkness. It
cannot be that the ground
mole leads a very interesting
life.
And what a tremendous
amount of work is necessary
for the poor guy in order to
get a mouthful of food. Tun
neling endlessly, as much as
15 feet in an hour, through
the earth just to get a worm.
How very discouraging each
day must be. That he accepts
it testifies to the truth of the
old adage, "We never miss
what we never had."
Digs Endlessly
But he digs endlessly on,
tunneling in the earth with
his tiny, nearly blind eyes
full of dirt, and the damp
earth pressing forever on his
silky fur. Pie struggles des
pcritcly to survive and for
what reason, when his life
must be such an unhappy
one?
Traveling endlessly In the
dark tunnels, making new
passageways, and always with
the prospect that around the
next bend his soft back may
push up a cold steel lever and
the clump of sharp steel
spikes of a mole trap would
be plunged into his cringing
back.
There he would die, alone
in the ever-present darkness,
having known no other way
of life. A strange existence
he has in a sparsely popu
lated environment - in the
cold damp world of "just be
low."
