In Food Poisoning

Most summer outbreaks of
food poisoning are the fault
of the consumer, -not the fnnH
processor, a University of Cbi
i cago scientist has declared.
"Not one in 5,000,000 pro
cessed food items will be con
taminated when it is shipped
from the manufacturer," Dr.
Gail M. Dack said. Yet an
estimated 60,000 "to 90,000
Americans suffer from food
poisoning every year.
The large number of food
poisoning incidents could be
markedly cut if people took
simple precautions, Dr. Dack
saw. .Perishable foods should
be kept refrigerated until
, they are wanted for use. It
takes seven hours at summer
temperature to poison perish
able foods, he reported.
' Food poisoning in the home
can be reduced by proper
treatment of frozen foods and
correct methods of home can
ning. Frozen foods should not
' be put back in the freezer
once Ihey have thawed, Dr.
uack said. Once the foods
have been warmed, bacteria
can grow that refreezing will
not kill.-
Home canning should be
done carefully with a pres
sure cooKer. It -takes high
temperatures jto kill botuli
num spores that can produce
a lethal poison when allowed
to grow.
While the botulinum spores
cause the most serious food
poisoning (about 65 per cent
of the cases, are fatal), most
N incidents are brought on by
the Staphylococcus aureus. It
is this common "staph" that
. causes eight out of 10 food
poisoning cases and most
often brings summer picnics
to, unfortunate finishes, Dr
Dack said., . "
. .'The remaining cases, about
. 10 per cent, are brought about
by 600 types of Salmonella a
. pacterium. While the "staph"
. and botulinum germs produce
poisons which, in turn, raise
havoc in picnickers" stom
achs, the Salmonella brings
on food poisoning' all by' it
self. Dr. Dack, professor of
microbiology and director of
the rood Research institute at
the University of Chicago, reported.

years on end. Besides being a
local merchant, the'pharma-
cist is a respected professional
; man. His opinions and his ac
tive support and participation
in civic adventures are sorely
sought." ,
Sachs, who has been in the
business for 19 years, says

destroyed recently when Eg
gertsville firemen refused to
call for help from a volunteer

Mrs. Henry P. - Brummer
said the trees were burned
during a grass fire that spread
across some 20 acres of her
land, and it wasn't until the
police stepped in that outside
help was sought to fight the
blaze. By then it was too late.

North Bailey Fire Company
sat across the street watching
the Eggertsville Fire Compa
ny trying to put out the fire,
but the Eggertsville men re
fused to Hk for assistance. A
spokesman later explained:
"We do not recognize North
Ba'ley as a fire company."
As for the North Bailey
firemen, they're barred" by
law from fighting a fire in
the Eggertsville district until
their aid in specifically : re
quested. " i

Most Blind People Like Helping Hand .

ing on the corner waiting to
cross a busy street, do you
assist him or do you feel that
perhaps he would rather you
didn't interfere?. .
Alvin Blood', president of
the Badger Association of the
Blind, says "most blind per
sons genuinely i welcome as
sistance . in . crossing streets,
entering public buildings or
finding a seat on a bus."
"If you walk with a blind
person or help him across the
street, ; it , .will be easier for
him if you offer him your
arm,'.' says Blood. "The mo
tion of your body usually lets
him know what to expect If
giving directions, be sure to
say right or left accordiag to
the way the blind person is
facing."
When you enter, a room
where there is a blind person,
be sure to say something, if
only a word, Blood said. If
necessary, let him know who
you are, he said.
"Above all, always ask a
blind person if he wishes
help," Blood continued.
"Many blind people can do
things easily for themselves
and do not like being helped
without first being asked.
When in doubt, a safe nil l
follow is to give the blind
person credit for being a
normal person and then act
accordingly."
