terian, church will hold its

Frozen Fish Dishes-Studied
Corvallis - New precooked
anf frozen fish dishes may ap
pear on Oregon tables and
open new markets for flavor
ful ocean rockfish as a result
of studies underway at the
Oregon State College Seafoods
Laboratory at Astoria.
One of the new recipes, a
precooked "all fish" loaf, dH
veloped by the Seafoods Lab
oratory, is a blend of delicate
ly flavored fish, eggs and sea
sonings, ready-to-eat after 30
minutes warming. Flavor tests
are being conducted on the
loaf to learn how it -keeps af
ter a year's frozen storage.
Food technologists are also
investigating a gelatin-t y p e
fish loaf that could be sliced
and served cold, and a poach
ed precooked, frozen fish serv
ed with a sauce. A rockfish
"sausage" for relish trays or
as an hors d'oeuvre also looks
promising, says E. W. Harvey,
food technologist who heads
up the project.
New Markets
New markets for Oregon
rockfish and an expanded con
sumer education program on
rockfish cookery are desper
ately needed by the seafoods
industry, Harvey says. More
than 45 species of rockfish
are available off the West
Coast with lots of room for
further product development.
"Rockfish" are any number
of closely related light-meated
fish, commonly called red cod,
blue perch, red snapper, or
ocean perch, that feed off the
ocean bottom. Easterners rel
ish ocean perch, which closely
resembles the West's rockfish,
but Oregonians have not yet
found an appetite for it, Har
vey continues.
High in protein and miner
als, rockfish are available year
around as Pacific Ocean perch,
red snapper, and rock cod.
OSC consumer marketing spe
cialists say that rockfish are
among the lowest priced fish
offered on local markets.
Sweden's maximum length
is 940 miles; greatest width
is 225 miles.
