Appetizing Rice Casserole
Is Economy-Wise Main Dish
Rich in starch, rice ranks
high among foods that sup
ply the body with energy at
low cost. Delicious served
simply with butter, salt and
pepper, it also combines per
fectly with fish, milk, cheese,
eggs, vegetables, and fruits,
or as in this recipe with meat,
ground beef to be exact.
Recipe makes six to eight
servings.
2Vz tablespoons butter or
margarine
2 tablespoons chopped onion
2 tablespoons chopped green
pepper
V2 pounds freshly ground
beef
Salt and pepper
4 tablespoons flour
13,4 cups milk
2 cups cooked rice
IV2 cups cooked or canned
tomatoes
Buttered bread crumbs
Melt butter in skillet and
saute the onion and green
pepper until tender. Add the
ground beef, sprinkle with
salt and pepper. Continue
frying until brown, stirring
often. Add the flour and mix
in lightly; add the milk, and
cook, stirring constantly, un
til thickened. Season with
additional salt and pepper, if
desired. Pour one-half of this
mixture into a lightly greased
baking dish; cover with the
two cups cooked rice and
spread the tomatoes over the
top. Pour in the remaining
beef mixture and cover with
buttered bread crumbs. Bake
in moderately hot oven (375
degrees) 25 to 30 minutes.
Like herbs? Add thyme, rose
mary or tarragon leaves to
the meat mixture or the to

sistency. Cheese-Olive Dip
You'll want to keep this
cheese-olive dip for parties of
all sizes and kinds. Recipe
makes about three cups or
enough for 8 to 10 persons.'
1 pound process Swiss
cheese, shredded
6 table spoons California
sauterne or other white
table wine
2 tablespoons mayonnaise
2 (4V2 ounce) cans chopped
ripe olives drained well
between paper towels
' cup chopped chives and
or parsley
2 teaspoons grated onion
2 teaspoons Worcestershire
sauce
Salt and paprika to taste
Have cheese at room tem
perature; place in bowl. With
a fork, gradually beat in
wine; blend with mayonnaise.
Add remaining ingredients,
mixing well. Chill several
hours to blend flavors. Bring
to room temperature before
serving. Heap in a bowl and
dust with paprika. Serve with
potato chips or corn chips,
crisp crackers or melba toast.
Southern Spoonbread
Fluffy delectable spoon
bread ' is an ideal substitute
for potatoes or other starch.
2 cups milk
1 cup cornmeal
V2 cup butter
1 teaspoon salt
1 teaspoon sugar
4 eeas. separated
Scald milk in top of double
boiler over boiling water
Add butter, salt and sugar;
stir until butter is melted,
Cool slightly. Beat egg yolks
and add slowly to warm mix
ture stirring steadily. Beat
egg whites until stiff; fold
into cornmeal mixture. Pour
into buttered casserole. Bake
in mnHprate oven. 375 de
grees, for 30 to 35 minutes
or until done. Serve with lots

six servings.
Honey Wine Vinegar
Dressing
For each six servings:
Measure one -half cup salad
oil, one-fourth cup honey, one
fourth cup wine vinegar, one
teaspoon dry mustard, one
toasnnnn salt, and two tea
spoons paprika into a quart
jar with tight cover. Shake
well to blend before each
using. Keeps well without re
frigeration.

down the cost-of-living moex
He makes the point that when
the homemaker sees or hears
nowadays that the govern-r-nst

has gone up, she understand-
ahlv assumes that food prices
are up, too. The fact is that
consumers are not paying any
higher overall prices for food
at the erocerv store than tney
did in August of 1952, a little
nver fiA vears ago.
During that 6V4 years the
cost-of-living index has risen
eight percent. If grocery store
food prices (we must remem
ber that other items than food
are also sold at grocery
stores) had gone up at the
same rate' as other cost-ox-
living items, the overall rise
wnnld have been more like
j ten percent instead of eight.

John XXIII will humbly wash
the feet of 12 poor of Rome
in Holy Week ceremonies at
the Basilica of St. John in
Lateran Thursday.
It will be the first known
time in recent history that a
Pope has carried out the wash
ing ceremony of Maundy
Thursday which recalls the
time Christ cleansed the feet
of his disciples.
Generally, the ceremony is
carried out by bishops or arch
bishops in cathedral churches.
The bishop washes the feet
of 13 poor men, deacons or
others. In monastic churches,
the superior washes the feet
of 13 monks.

Three Arrested
For Theft of Safe

county deputies Sunday night
took three men into custody
about three hours after a safe
was taken from the Portland
Dog and Cat hospital here.
Arrested were Robert Bar
ney Stevens, 36; Arthur Leroy
Jenks, 39, and Herman Harp
er, 50, all listed as transients.
Officers said that two depu
ties on routine patrol investi
gated a car in Lewis and Clark
park and found the three men
attempting to break into the
safe. The safe contained only
insurance policies and hos
pital records, officers said.
Soviet Steamer
Collides in Fog
Boulogne, France-(UPD-A So
viet steamer sank and a Ger
man freighter was crippled to
day in separate collisions in
thick fog off the coast of Eu
rope. One man was missing
and feared dead.
The 2,332-ton Soviet steam
er Kholmogory went to the
bottom in the North Sea near
the German coast early today
when it collided with the
5,794 - ton German freighter
Bischofstein. Forty-one mem
bers of the Russian crew were
rescued, but one Soviet sailor
was missing and feared drown
ed. The Bischofstein suffered
minor damage.
The second collision oc
curred Sunday night in the
fog-shrouded English Channel.

Grammerstorf took water in
two holds after it hit the Span
ish cargo ship Monte Bustelo.

Two-Car Crash
Kills Tacoma Man

person was killed and three

car crash here.
Dead is James E. Mahoney,
about 50, of Tacoma. Police
said he was a passenger in a
