Sugar is Sweet,
Saccharin is Sweeter
"Goodnight Sugar." If that's
what you've been saying, you
could have laid it on thicker
had you said, "Goodnight
Saccharin" when you left her
at her front steps. You must
have been intending to con
vey "all your love," for you
thought she was "awfully
sweet," and saccharin is just
about five hundred times
sweeter than sugar.
And, too, there seems to be
just one kind of saccharin, a
crystalline compound pre
pared from coal tar, and sup
posed to be half a thousand
times sweeter than cane sug
ar. So, calling your loved one
Saccharin instead of "Sugar,"
lends an individual distinc
tion, for there are many kinds
of sugar. There is cane, beet,
palm, brown, powdered,
grape, milk, and fruit sugar,
to name a few. They are all
sweet, but almost could be
considered "sour" when com-,
pared to saccharin.
Juice of Plants I
All sugar, or at least most
all, is contained in the juice
of certain plants; sap we call
it. Maple sugar from maple
trees, beet sugar from roots,
and cane . sugar from sugar
cane, a member of the grass'
family. Honey is called grape
sugar. Fruit sugar occurs in
all sweet fruits; palm sugar,
almost as dark colored as
brown sugar, is derived from
various kinds of palm trees;
and naturally milksugar is
found in the milk of animals.
Columbus brought some
cane sugar over with him, but
the people of Southern Asia
had been using cane sugar for
about three thousand years;
while saccharin is relatively
recent, being discovered by a
German chemist about 75
years ago- It has no food
value but it's sure sweet.
Maybe it's not important to
know, but just on the off
chance you might want to clut
ter up your thinking pro
cesses, or start an argument,
you can "throw a wrench in
the works" by telling your
friends thereiis a "left-handed
sugar" as well as a "right
handed sugar." There sure is,
for the chemical test for
which sort of sugar you are
monkeying with, is conducted
by shooting a ray of polar,
ized light through the sample
in question.
To the Right-Cane
If the ray, when passing
through the solution, turns to
the right, it is cane sugar;
but if the ray turns to the left
when passing through, it's
glucose, or grape sugar. .
Therefore, stupid as it ap
pears, dextrose is "right
handed sugar," and glucose is
"left-handed sugar." The di-
rectidn taken by the ray, and
the degree of divergence, that
is, the size of the angle, de
termines the kind and strength
of the sample tested. The
chemist merely dissolves a
given amount of sugar in a
given amount of water, and
passes the polarized ray
through the solution with a
piece of equipment known as '
a "polariscope."
Without a "polariscope" you
can't tell for sure whether the
sugar you sweeten your cof
fee with is right, or left-handed,
and really it doesn't make
a crystal's worth of differ-"
