Feeding the Family

Can Be Made Ahead
Here's a sweet an savory
appetizer for an important
sit-down dinner. Iced fresh
fruits are wedded by a dash
of liquer or flavoring for of
fering lucky guests along
with pungent canapes perhaps
combining pimiento cream
cheese and red caviar on
crisp crackers.
Day before party, section
oranges and grapefruit, add
thinly sliced red-skinned ap
ples and put in a refrigerator
container. Add enough orange
juice to cover fruit and any
flavored flavoring' (creme de
menthe, Cointreau, rum, bran
dy, vanilla or almond flavor
ing or liquid from green or
red maraschino cherries with
some of the cherry added.
Chill overnight to blend
flavors. At serving time, ar
range in prettiest sherbet glas
ses. Add a few banana slices
and a sprig of mint if you
like.
Spicy Ham Loaf
For Open House
For open house for a crowd
or simply to have on hand
for family enjoyment, a well
seasoned ham loaf is a happy
thing to have handy. Can be
put together the day before;
baked then for serving cold
or refrigerated and baked
another day for serving hot.
Make one, two or more loaves
according to demand.
3 cups ground or finely
chopped cooked ham
A cup fine bread crumbs
V cup finely chopped onion
2 tablespoons finely chop
ped green pepper
Vi teaspoon dry mustard
Va teaspoon allspice
lb teaspoon ground cloves
2 eggs, slightly beaten
iAu nun millr
Combine ham, bread
crumbs, onion, green pepper,
mustard, allspice and cloves.
Add eggs and milk and mix
until well blended. Pack into
a one-quart loaf pan. Bake
in moderate oven, 3 5 0 de
grees, for 45 minutes. Un
mold and serve, garnished
with lemon or orange cups
filled with cranberry relish.
Dress up platter with shiny
leaves from shrubbery.

Choose pineapple for looks
as well as ripeness. Cut crown
from pineapple about two
inches down from top, follow
ing scallops of the shell to
give scallopped effect. Re
move core and hollow out
fruit with a sharp knife.
Chop fruit chunks fine and
you'll have about two cups.
Soften an eight-ounce pack
age of cream cheese at room
temperature; blend with two
tablespoons light cream on
low speed of electric mixer
or otherwise. Fold in the
chopped pineapple. Return to
pineapple shell and refriger
ate overnight for flavor-blending.
Surround pineapple bowl
with cracker assortment; use
pineaple crown as platter dec
oration. Coffee for Crowd
Throughout the holidays,
the cup that cheers helps keep
festive spirits high. Coffee
for a crowd is made in a mat
ter of minutes when you have
a two-ounce jar of instant
coffee at hand. No coffee
measuring or guessing.
For 32 cups of consistently
good coffee, empty one two-
ounce jar instant coffee into a
pot; add 1V gallons (six
quarts) boiling water. Stir,
cover and let simmer several
minutes but do not boil.

Sauce Sorcery for
Leftover Fruit Cake
For letfover fruit cake that
will really "take the cake",
try some sorcery with sauces.
These alluring looking, good
tasting foamy sauces, heated
in a double boiler, will put
your leftover fruit cake slices
and pieces right up in the
party-glamour class. Pure va
nilla extract blends the other
sweet flavors.
Creamy Hard Sauce. Cream
one-half cup butter or mar
garine until softened. Gradu
ally blend in 1 cup sifted
confectioners sugar along
with one teaspoon vanilla ex
tract. Fold in one-half cup
heavy cream, whipped. Serve
over steamed puddings, steam
ed fruit cake, garnish with a
sprinkle of grated orange or
lemon rind if you like.
Mocha Sauce. Cream one-
half cup butter or margarine
until fluffy. Gradually blend
in one cup sifted confection
ers sugar and -one egg yolk.
Cook over hot water until
hot, stirring constantly. Re
move from heat. Beat in 1V
teaspoons pure vanilla ex
tract and one-half teaspoon in
stant coffee. Carefully fold in
two stffly beaten egg whites.
Serve warm or cold over
steamed pudding, steamed
fruit cake, cottage pudding
or sponge cake. Garnish with
shaved unsweetened choco
late, if desired.

Ruth M Mildred doesn't
respond to my help.
Mildred S. Nobody cares
if I live or die.
Ruth M. I have been a
widow for several years and
I feel that I am in a good po
sition to help a good friend
of mine whose husband died
a year ago. However, I am
worried because Mildred does
n't seem to be snapping back
and doesn't respond to my
help.
One problem may be that
Mildred is childless. I have
three married children and
they and the grandchildren
keep me busy and active. But
even that is not enough. I
have found a lot of pleasure
in going to lectures and join
ing women's clubs.
I feel that Mildred needs
that kind of thing, but she
is so reluctant to go. She re
fuses to go out and buy her
self nice clothes and then in
sists she has nothing to wear.
If she does go she says she
feels out of place. I tell her
she must do these things. It's
good for her.
Mildred S. Is it good
for anyone to do things you
don't care for and have no
interest in? Those lectures and
women's clubs Ruth has tak
en me to are so boring I
could hardly sit through un
til the end.
It is certainly no incentive
to have to get up and go out
to a thing like that. Some
times I think there is just
no sense in getting up in the
morning at all. Just putting
on any old clothes seems to
take more energy than I have.
My husband was an in
valid for some time before he
died. No effort I made for
him seemed like too much. I
had boundless energy. Yet I
can't seem to do a thing for
myself. ( '
I suppose if I had a lot of
relatives living near me
things would be different.
But I have nobody who cares
if I live or die.
The Council. Mildred is
lucky to have as good and
thoughtful a friend as Ruth,
particularly in view of the
fact that at this time she takes
no interest in others and prob
ably does not reciprocate
Ruth's kindness. She runs a
strong risk of losing even this
one good friend.
Ruth should realize, how
ever, that good advice and
graciousness can serve as a
spur to a down-in-the-dol-
drums friend, but it can't do
the whole job. . As long as
Mildred allows herself to be
dragged to various functions
and is unable to generate any
active interest, little will be
accomplished.
Mildred's reaction to her
lonely widowhood is a natural
one, but it is also rather dan
gerous if it is allowed to con
tinue indefinitely. What Mil
dred is really saying is that
her incentive to live is gone
now that she is no longer
needed and no longer in an
Beck Appeal To
Be Heard March 25
Olympia, Wash. -(UPD- The
appeal of Dave Beck Sr., for
mer . Teamsters Union presi
dent, from his grand larceny
conviction will be heard on
March 25 by all nine judges
of the State Supreme Court,
court attaches announced
Monday.
The wealthy Beck was con
victed a year ago of stealing
$1,900 from a sale of a team
ster-owned Cadillac. He was
sentenced by King County Su
perior Judge George H. Re
velle to a maximum of 15
years in the state peniteni
ary. Beck is now being tried
on income tax evasion charges
at Tacoma. The trial was re
cessed Dec. 22 until Jan. 5 ;
because Beck became ill. He
is accused of evading $240,-
000 income taxes from 1950
53. inviting out - of - hand enjoy
ment. End of the turkey, other
poultry or ham opens way
for a New Year's roast of
beef, a pork roast or a leg
or shoulder of lamb. Budget
balancers are hamburger,
frankfurters, stews and brais
ing meats just like any other
time of the year. A huge
welsh rarebit will satisfy
everybody for a while.

cauliflower, celery, lettuce,

The problem isn't unique.
Many individuals find them
selves in such a situation at
one time or another and it
makes a good deal of gump
tion and effort to get out of
it. Mildred must realize that
the passive suicide she is now
involved in is futile, waste
ful and criminal. She should
try to set herself some small
tasks for others. If she looks,
she'll find friends, neighbors
and strangers who can use
something that she offers
even if it's nothing but good
fellowship. Gradually she will
find ways of giving more and
taking more from her new
life.
