venison now and in months to
come with these new recipes.

venison steaks and stew, say
Oregon State college home
economists. New recipes are
requested every year for. veni
son and other game meat.
In any recipe, remove all
fat from the meat before us
ing, they caution. Fat car

vor. Directions for making veni
son " mincemeat, barbecued
venison and venison meat loaf
are offered by Mrs. Ruth
Klippstein, OSC extension nu
tritionist. Mincemeat may be
frozen and used later in pies
or in filled holiday cookies.
For the mincemeat use 2
pounds cooked venison, ante
lope or elk, chopped; 4 pounds
chopped apple, 2 pounds rai
sins, 4 cups brown or white
sugar, 34 pounds chopped suet
or butter, Vfe teaspoon nut
meg, 2 teaspoons salt, lYz tea
spoons cinnamon.
Method Given
Remove fat from venison
before simmering. Simmer
till tender. Cool and grind
Combine these ingredients
and add about 1 quart of cid
er to cover. Other fruit juices
may be substituted for cider,
by adding Y2 cup vinegar to
the juices. Reduce sugar if
sweet fruit juices are used.
Cook mixture very slowly un
til fruits are tender (about an
hour). Stir often. Freeze in
amounts sufficient for a pie.
If mincemeat isv canned, proc
ess as for ground beef; 90
minutes as 10 pounds pres
sure for quarts, 75 minutes at
10 pounds pressure for pints.
A tasty marinating sauce,
for use on less tender cuts
such as necks and shoulders
used in stews, is suggested.
Steaks may also be brushed
with the sauce, and allowed
to stand before cooking. The
011 garlic sauce tenderizes
the meat and adds flavor.
The sauce uses 1 cup cook
ing oil, 1 tablespoon salt, 1
teaspoon black pepper, 1 ta
blespoon Worcestershire sauce
or beef extract, 3 cloves of
garlic, minced.
Place sauce in closed con
tainer and shake vigorously
to blend.
Broil meat over hot coals
for 20 to 25 minutes, brushing
liberally with sauce, or oven '

Mrs. L. R. Coder, Ashland,
was elected president of the
Southern Oregon Pioneer as
sociation at the annual reun
ion meeting Thursday.
Other officers elected were
Homer Billings, Ashland,
vice president; Miss Claire
Hanley, Medford, secretary;
Mrs. Bess Sommers, Ashland,
treasurer; and Mrs. Herbert
Hanna, Medford, treasurer.
The annual reunion was
held in Jacksonville and in
cluded a talk by Dr. Clifford
R. Miller from Southern Ore
gon college. The meeting was
held in the Masonic temple
and students from junior and
senior high schools of Jack
sonville furnished the music.
John J. Crabbe, superintend
ent of Jacksonville schools,
introduced the students.
Women of Adarel Social
club served the luncheon.

formula. The formula con
tains "Purateen" or methyl
benzethonium chloride, which
the manufacturer says gives
lasting "wetproof ' protection.
It also helps kill bacteria
which cause diaper rash, pre
vents and heals prickly heat,
chafing and other simple in
fant skin irritations.
