Coffee, Milk Costs
Found About Equal
Corvallis (UPI) Research
ers at Oregon State College
have completed their lengthy
survey to find out why some
Oregon restaurants charge 5
to 15 cents extra per serving
oi Oregon milk compared to
South American coffee.
A report of the economic
study asserted that the extga
charge made for the Oregon
product was "not justified" on
the basis of comparative costs
ol serving the two beverages.
The researchers reported
that milknd coffee costs the
restaurant about the same per
guest. Milk costs more than
coffee, but when, labor, equip
ment, extra dishes, usual cof
fee refills, sugar and cream
are figured in, there is little
difference between the two.
The report added that the cost
of serving milk has been con
siderably reduced with the in
troduction of bulk milk dis
pensers which simplify stor
age and handling.
Four western Oregon res
taurants were used in the OSC
survey. (
