The next time you tap a can
of beans you might like to
know that more than 20 bil
lion pounds of food are
canned (tinned, if you're Brit
ish) each year far and away
the most important method
of preserving the world's
food.
This method of protecting
food was discovered by a
French chef and candy mak
er, more than 150 years ago.
This chef discovered that
by stuffing food in glass bot
tles, then cooking it, and seal
ing it away from contact with
air he could prevent it from
decaying.
Glass bottles were soon re
placed with metal containers,
some of them huge iron ves
sels. These early ."cans" of
ten carried instructions round
the top explaining how to
open them with hammer and
chisel.
Eventually these massive
containers were superseded
in England by tin canisters.
This term was shortened to
"tin can" and once invent
ed, canning could be done
fairly cheaply and such quan
tities that canned foods have
now become the accepted
daily diet of almost every
family in civilized countries.
At first it was believed that
the canned food was protect
ed from spoiling by being
kept apart from the polluted
air. Then, that the food in
cans did not decay because
it was sterile completely
free of microbes.
Could Not Multiply
Experiments prove that this
is far from true. In an inves
tigation of several thousand
tins, living microbes were
found in the majority of
cans. But even though alive,'
these microbes could not mul
tiply and so the food remain
ed undamaged under the con
ditions prevailing inside the
can, states Dr. J. Gordon
Cook in "The Fight for Food"
(Dial, N.Y.).
The remarkable ability of
these microbes to remain in
a state of suspended anima
tion inside a can of food was
shown in 1937 when the cans
of food taken by Sir William
Edward Parry to the Arctic

personalty. In an attempt to
acquaint the women in the
Rogue River valley who lis
ten to the program with the
different persons, he sent a
box of fruit preserves and the
letter to the program in
hopes that the mistaken-iden-tify
will be cleared up.
He explained that many
persons believe that the na
tional program originates
from the Chamber of Com
merce office here.
