Creamy Tangerine Sherbet
1 ' cups sugar
2 tablespoon lomon juice
2 teaspoons grated tangerine peel (grated through
colored part only; white Is bitter)
Vi cup tangerine ulce
V teaspoon salt
2 cups cream
2 or 3 drops orange food coloring
1. Set refrigerator control at coldest operating temperature.
Set a bowl and rotary beater in refrigerator to chill.
2. Blend together in a bowl, in order, the sugar, lemon juice,
tangerine peel, tangerine juice, salt, cream, and food color
ing. Stir until sugar is dissolved.
3. Pour into 1-qt. refrigerator tray and set in freezing com
partment of refrigerator. Freeze until mixture is mushy.
4. When mixture is mushlike, turn out into the chilled bowl
and beat with the chilled beater until smooth. Immediately
return mixture to refrigerator tray and freeze until firm.

Note: Frozen tangerine-juice concentrate may be substituted
for the fresh tangerine juice. Partially thaw Vz cup tangerine .
juice (do not reconstitute). Reduce sugar to 1 cup and sub
stitute 1 teaspoon grated orange peel for the tangerine peel.
Cherry -Chocolate Dennert Rolltt
1 cup butter or margarine
Vi cup hydrogenated vegetable shortening or
all-purpose shortening
1 pkg. active dry yeast
' cup warm water, 1 10F to 115'F (Or If using
compressed yeast, soften 1 cake In '4 cup
lukewarm water 80aF to SSF.)
1 Vs cups ( 1 5-ox. can) undiluted evaporated milk
3 "99 yolks, slightly beaten
2 tablespoons sugar
2 teaspoons salt
teaspoon vanilla extract
5 cups sifted flour
1 cup (about 4 oz.) walnuts, ground or finely chopped
6 oz. (1 pkg. ) semlsweet chocolate pieces
'j cup maraschino cherries, cut in quarters and well
drained
'i cup sugar
2 teaspoons ground cinnamon
1. Melt butter and shortening together over low heat. Set
aside.
2. Soften yeast in water.. Let stand 5 to 10 min.
3. Mix together Vi cup of the evaporated milk, the egg yolks,
2 tablespoons sugar, salt, and vanilla extract; stir into the
melted shortening. Blend in, beating until smooth, 1 cup of
the sifted flour. Stir softened yeast and add, mixing well.
4. Beating well after each addition, alternately add the re
remaining flour in fourths, the remaining evaporated milk in
thirds to yeast mixture. Finally, beat until smooth. Knead in
the bowl until dough pulls away from sides of bowl. Cover
with waxed paper and a clean towel and put into refrigerator
for 2 to 3 hrs., or overnight.
5. Lightly grease baking sheets.
6. For filling, mix together the walnuts, chocolate pieces, and
cherries. Set aside.
7. Mix together the cup sugar and cinnamon. Sprinkle
mixture evenly on board. Divide dough into two equal parts.
Roll each portion of dough into a round about 15 in. in diam
eter. Cut each round into 16 wedge-shaped pieces. Put 1
teaspoon of the filling on each wedge. Roll up each wedge
beginning at wide end. Place rolls on greased baking sheet
with points underneath. Cover with waxed paper and a towel
and let stand in a warm place (about 80F) about 1 hr.
8. Bake at 350F 20 to 25 min., or until lightly browned.
