Way to Preserve
Meals Introduced
Chicago 'U.P.i A new pro
cess of using antibiotics to pre
serve freshness of meats has been
introduced by the American Cy
amid company.
."All that may be necesary."
occording to Dr. Wilbur H. Mil
ler, of American Cyanamid, "is
a quick spray or dip of the con
sumer cut with a solution of aur
aomycin chlortetracycline prior
to packaging."
Miller said the process, called
Acronize, "will use the antibiotic
combined with refrigeration to
help put perishables such as red
meats, fish and poultry into the
same category as most other it
ems in the modern supermark
et." -
Miller noted an interesting
possibility is "the centralized
packaging of consumer cuts of
red meats where the cut could
pass from a central depot to the
market and then under refiger
ation to the consumer untouched
by human hands."
The process was cleared for
commercial use on poultry by
the Federal Food and Drug Ad
ministration last November and
Miller reported a steady advance
in demonstrating the utility of
the process on fish, beef, pork
and lamb.
. Ha said Acronize adds
taste or color of its own, can
not conceal inferior condition of
the foods and was devised to im
prove on original quality.

Speaker Urges Scholarship Aid

scholarship committee em
phasised the importance of sum
mertime employment for deserv
ing students, a project currently
supported by local Rotarians.
During the past few years
with Mrs. Butler as head of the
scholarship program, Medford
high school has had more stu
dents accepted by West Point and
Annapolis academies and by lead
ing eastern universities than any
other high school in Oregon on a
per capita basis.
Financial need is the major
problem of youngsters seeking
scholarships in institutions of
higher education, the speaker
told Rotarians. Increasing tuition
and living costs make this bar
rier especially difficult in larger
eastern universities. The ten
year Merit Scholarship .plan,
wit) S20 million subsidy pro
vided by industry, brings stiff
competition among high school
students of the U. S., she pointed
out.
Ray Johnson, chairman of the
newly organized Medford Rotary
club scholarship and foreign stu-
dents committee, introduced
Mrs. Butler and briefly outlined
the efforts of the club to cooper
ate in Medford high school's
scholarship program.

not been advised to return to
his father's bedside at this mo

way, improve or get worse," the
family physician said. The vice

Americans Getting Better Food
But They Donrt Know H ow To Eat
Pacific Grove, Calif., (U.PJ-
Americans are presently get
ting better food than their grand
parents did but they don't
know how to eat it,
to Dr. Wendell H. Griffith, head
of the University of California's
Medical Center's Department of
Physiological Chemistry in Los
Angeles.
Griffith spoke today to nearly
700 of the nation's leading farm
economists attending a joint
meeting of the American Farm
Economic Association and the
Western Farm Economics As
sociation. - -
He said that thanks to modern
science and technology Ameri
cans have a wide selection of
foods in and out of growing sea
sons, in and away from where it
is produced.
"Happily, general food short
ages, including shortages of pro
tein, and problems involving
cleanliness of food are not ser
ious in this nation today," he
said. "But, unhappily, overeat
ing and lack of 'know-how' about
nutrition are major difficulties."
Americans Eating Lets
Despite the tendency to as
sociate obesity with consumption
of fat, the UCLA scientist said.
it is not really known whether
the culprit is too much fat, too
much dietary calories, or other
factors.
Dr. M. K. Bennett, Director
of Stanford's Food' Research In
stitute, told the group that sur
prisingly, although people have
more income for food, they
aren't eating as much.
He described a study he had
made of food consumption in
America during the past 70
years. The study shows there
has been a drop of about 14 per
cent in the amount of food, on
calorie basis, sold in stores
despite a tremendous increase
in family income.
He explained that Americans
today can afford a wider variety
of food, so there has been a
spectacular drop in the consump
tion of potatoes and grain pro-
ducts, while cousumption of all
other foodstuffs has been rising.
I Modern Machines Blamed
I Bennett said automobiles and
I other machines have reduced the
according j amount of energy we expend
and the reducing diet fads have
also become a factor.
Theodore W. Schultz, head of
the University of Chicago's De
partment of Economics, took

party platforms of both Repub
lican and Democratic Parties.
He said the answer to Amer
ica's critical farm problems lies
not in price supports or soil bank
programs, but in getting more
people off the farm.
He suggested overhauling state
and federal farm employment
agencies so they will serve farm
people who want to leave farm
ing and enter other occupations.
