In Meat Sanitation Survey

unclean and faulty walls, trol
leys and rails the most common

plants checked according to M.
E. Knickerbocker, chief of the
state department of agriculture
animal division.
Sixty-nine plants had walls in
need of cleaning, repair or paint.
Trolleys and rails in 62 plants
needed cleaning, oil or paint.

turing activity in Jackson coun
ty in 1954 totaled $37,637,000,
an increase of 66.5 per cent over
the 1947 value of S22.604.000,
according to figures by the bu
reau of census, department of
commerce.
The number of employees in
Jackson county manufactoring
activities rose from 2,878 in 1947
to 4.987 in 1954.
The value added by manufac
ture is determined by the differ
ence in the cost between the raw
material and the finished prod
uct. Josephine county, with a
value by manufacture of $17,
451,000 in 1954, showed an in
crease of 104.5 per cent over the
$8,534,000 value by manufacture
in 1947. In Klamath county, the
value added through manufac
turing increased from $20,232.
000 in 1947 to $25,835,000 in
1954 or 27.7 per cent.
Payrolls in Oregon
Manufacturing payrolls in
Oregon rose to $564 million in
1954, an increase of 77 per cent
between 1947 and 1954. The
value by manufacture showed
an increase of 52 per cent to
more than $1 billion in 1954, ac
cording to preliminary figures.
The greatest increase in manu
facturing activity in the state
measured in value added by
manufacture, was in Curry coun
ty, where value added jumped
. from $490,000 in 1947 to $12.3
million in 1954. on increase of
more than 2.400 per cent.
The three leading major in
dustry groups in 1954, based on
value added by manufacture,
were lumber and wood products,
$581.1 million: food and kindred
products, $120.9 million, and
pulp, paper and products, $65
million.
Wheat consumption per per
son in the U.S. declined from
310 pounds in 1909 to an esti
mated 173' pounds in .1955.

of the meat itself, 44 plants fail
ed to clean tools or kitchen
equipment each evening. ..
. A meat processing plant's
water supply also affects the
wholesomeness of its meat. Al
most 48 per cent of the water
samples taken at 80 plants were
contaminated.
Most packing plants in' the
pilot meat snnitation survey fol
lowed basic sanitation practices
and conditions such as aprons,
gloves and clean clothing for
workers; adequate doors, vent
ilation and pickle room equip
ment; sanitary transportation
equipment and only fresh meats
in the plant.
With few exceptions, most
meat processing plants welcome
sanitation studies and the educa
tional wort which accompanies
the actual meat inspection. In
spectors are now in the second
round. The program's directors
are anxious to determine of in
sanitary conditions and practices
discovered in the first"' round
have been corected. '
LABORATORY EQUIPMENT
