Council Gives
Instructions
On Milk Care
Want to keep those dairy
foods as fresh, sweet and flavor
ful as they were when you
bought them at the store or
they were delivered to your
doorstep? Every homemaker
does, particularly during these
warm summer days. Many peo
ple fail to realize that prompt
refrigeration and protection
from contamination are just as
important after milk reaches the
home as they were during its
production and processing. Prop
er care of milk in the home will
help conserve valuable vitamins
and minerals, as well as keep it
clean and safe to drink, accord
ing to the Oregon Dairy council.
If milk is delivered at the
door, take bottles in immediate
ly after delivery. Wipe off the
bottle with a clean damp cloth
and place in the coldest part of
the refrigerator. The reason for
wisking milk into immediate re
frigeration is this: heat and light
cause changes in the flavor of
milk, as well as a loss of food
value. The vitamins, riboflavin
and ascorbic acid (Vitamin C)
are sensitive to light, and it is
the destruction of these nutri
ents by strong light which
causes the "sunshine flavor"
not harmful at all, but not as
sweet and delicious as cold,
fresh milk, says the council.
To help conserve the food
value in milk, don't leave milk
on the kitchen counter when
preparing or during a meal.
Pour milk for drinking just be
fore the meal is served.
A word about the care of
evaporated milk and powdered
milk which many homemakers
use. Evaporated milk will not
spoil while the can is unopened.
However, after opening, it re
quires the came care as fresh
milk. Powdered milk should be
kept in a lightly closed contain
er and stored in a cool, dry
place.
Coffee cream and whipping
cream should always be kept re
frigerated until immediate use.
For best results in whipping
cream, chill the bowl, beater and
cream thoroughly. Use a deep
bowl with straight sides and
beat rapidly. Abo the more
sweetening used, the less stiff
the whipped cream will be.
To preserve butter's flavor
and freshness, keep it wrapped
or covered and store in a cool,
dark place preferably the re
frigerator. This prevents deteri
oriation of the butter and ab
sorption of other food flavors.
No one likes butter which tastes
like onions or some other strong
flavored food.
A good rule to remember In
storing all dairy foods, whether
it be milk, butter, cheese, cot
tage cheese, ice cream or yogurt,
is the three C's always keep
them clean, cold, and covered.
It will pay dividends in fresh
ness, flavor and food value.
