Is That So?
Noticed the change! lately In
your carrots, string beans, broc
coli and beets?
Perhaps not, because the re
styling has been so gradual. But
when you think back, say to 20
years ago, you'll recall how dif
ferent some of these vegetables
were.
Mostly, these changes were
brought about by the. frozen-food
industry and the way those boys
look at it, apparently there is no
vegetable so good but what it
can be made even better.
In this remodeling process so
many of our basic vegetables
have bene redone that it is al
most impossible to sit down to a
dinner without enjoying at least

one of these restyled foods.
Here are some of the changes:
The carrot which tended to be
top-heavy and often forked has
been given an H look, slendered
down from above and filled out
from below to make it more cyl
indrical. Means much less waste
when shot through a dicing ma
chine for soup.
Remember the curved snap
beans? All very good, but that
curve slowed down the French
itring bean cut. So what did they
do? They took the curve out
and now it is straight as a string.
Speeds slicing by 25 per cent.
The inside of beets, you'll re
call, used to be of a palish color
now and then. But no more; they
are a beautiful deep red through
out. As for carrots, they often
had a pale core with a bright or-

ange outside. Now, after soma
30 years, carrots are solid orange.
Gives the cubed carrots more
eye-appeal in the soup pot.
Habits Changed
You'd think this had gone far
enough, perhaps. Not so. Because
most f r e s h-frozen processing
plants were located in the val
leys like the northwest where
other vegetables were in season
these restylers went about
changing the very habits of ve
getables so they would grow in
that area. Take corn. Corn nor
mally needs long hot summer
nights which they dont' get in
the northwest. So a hybrid was
developed which flourished in
areas where nights became cool
but yet the kernel was kept
soft and tender.
How has this horticultural
magic been brought about, and
so quickly?
Let's take a look at the carrot
which had been growing the
same way for a thousand years.
Back in the '20 s, the canned
soup industry asked for a carrot
which was orange all the way
through none of this sickly
looking core. So Frank Cuthbert-
son of the Ferry-Morse Seed Co.,
went to work to breed a strain
with an orange core.
First he had to find one with
orange "blood" as he termed
it. To find that one, he grew
thousands. To Eet a peek at
their cores, he took samplings of
each root with a small glass tube.
Whenever he found a darker-
than-average core, he put a
marker beside it and waited pa
tiently for the seed. Then they
were replanted and after repeat
ing the tedious procedure 15
years he finally got ten carrots
with no trace of pale yellow
cores.
Furthermore, he selected them
because of their size and shape,
which was just what the soup
makers ordered. Success, after
painstaking effort.
And so wtih broccoli. At one
time it grew as many buds on a
rather long stalk. Cuthbertson's
job was to bring the buds to
gether to make something of a
cauliflower head.
Plant Restyled
Presto, within nine years he
restyled it into an umbrella-
head plant which the pickers
could harvest with one swoop or
the knife and the packers could
put it up with a minimum of effort.

Upholstery Academic
Classes Start Monday

Courses in upholstery, ac
ademic classes, and arts and
crafts will get under way Mon
day as part of the Medford pub
lic schools summer program.
The upholstery class will be
held for two weeks, beginning
Monday and concluding June
29. Classes will be held at the
McLoughlin Junior High school
gymnasium.
The course will include up
holstering small projects and
fabrication of slip-covers or
draperies. The class, to be held
from 9 a.m. to noon daily, will
be instructed by Mrs. May Frye
of Eugene. Registrations m,ay be
made Monday at the junior high
school.
Academic Classes
Summer academic classes for
students of Medford schools
having recommendations from
their teachers and principals,
will be held from June 18 to
July 20 at McLoughlin Junior
High school. - The program,
school officials reported, is
directed at students who have
missed considerable time from
school or who have barely met
minimum requirements for pro
motion. Registration will start at
8:30 a.m. Monday and classes
will meet daily between
8:30 a.m. and noon. No tuition
fee will be required for res
idents of school district 49.
Arts and crafts workshop for
students in grades four through
12 will start at 8:30 a.m. Mon
day at the woodshop building
directly north of the main build
ing at McLoughlin Junior High
school. Classes will be held Mon
day through Friday from
8:30 a.m. to noon and will con
clude July 20.
Classes will begin June 25 in
band and baseball. Already in
session are adult driver train
ing classes, which started June
13, and orchestra, which started
June 12.

Salem (U.R) The Oregon
State Highway Commission Sat
urday awarded a $107,240 con
tract toTom Lillebo of Reeds
port for grading, and oiling on
the Independence-Albany high
way approximately five miles
south of Independence. There
were five higher bids for the
federal 'aid project.
Washington (U.R) The
Navy's second super aircraft car
rier, the Saratoga, went to sea
Saturday for final builders'
trials. It will run at full power
for the first time.

food packers respond with a
thundering affirmative! Because
the vegetables look fresher and
more perfect with lots of eye
appeal t h e housewife buys
them: and so, today, we have
solid orange carrots; red-fleshed
beets, uniform green lima beans,
easy-to-process broccoli, and
straight-as-a-string string beans.

Kidnap Four Alter
Escape From Jail

Three Chicago youths, one a 14-year-old,
escaped from an Illin
ois jail early Saturday and id
napped four persons in an in
terstate flight in three stolen
automobiles.
Two were captured here. The
third, identified as the ringlead
er, eluded capture. The four
persons seized in the flight all
were released unharmed.
The three youths first over
powered turnkey P. N. Bandy
and fled from the Montgomery
county jail at Hillsboro, 111.
They took with them what fire
arms they could find.
Warner Yates, 14, and Ray
mond Schneider, 20, were nab
bed by sheriff's deputies man
ning a blockade west of here.
Norman P. Kelly, 20, the ring
leader, ran to freedom again.
Authorities said two frighten
ed hostages were in the car
when it was stopped, Miss Sel
ma Richter, 27, and William R.
Horton, 28, both of Pana, 111.
They were the second couple
kidnaped by the trio as they
fled Hillsboro.
Earlier, the fugitives com
andeered the auto of Mr. and
Mrs. Don Fogler, also of Pana,
at Irving after the first auto they
stole ran out of gas at that point.
Sheriff Clem Neely said at
Hillsboro that the trio overpow
ered Bandy as he took a prison
er to the cell block. Bandy, 65,
said the cell door struck the
htel of the new prisoner and
flew open, allowing Kelly the
opportunity to jump out and
overpower him.
Bandy later said the escapees
threatened to kill him if he call
ed out, and choked and tried
to gag him until he couldn't
speak. Then they threw him into
the cell block and locked the
door.
A machinegun, a shotgun and
two rifles were taken from the
jail by the three youths.

Hotel, takes off for Europe in
two weeks on the town's first
international chorus girl search.
Entratter and Frank Sinatra, one
of the hotel's owners who's in
Spain for a movie, will have the
job of looking over Europe's
lovelies.
The winners get to parade on
a stage during Sinatra's show at
the Sands beginning Sept. 12 It's
television, sighs Entratter, that
has used up all the pretty girls.
Advertisement Placed
"On my last audition in Holly
wood I looked over 1,000 girls
and only found two I could use,"
he explained. "I've run ads in
every big city in the country.
"TV is eating them up. The
real pretty ones quit to do com
mercials on television. Those
who can dance would rather
dance on TV only one night a
week to work. And many be
come actresses or models."
This dreadful state of affairs
have Entratter and Sinatra
down to their last 12 chorus
girls, and their contracts end in
a few months. Most leave to get
married or work in other jobs.
Qualifications Listed
But by then Entratter and
Sinatra will have run ads in the
newspapers, in Paris, Madrid
Rome, Brussels and London.
The ads will read: "All you
have to do is look beautiful. You
don't have to dance or have any
experience to work at the Sands
Hotel in Las Vegas."
Entratter got the idea of raid
ing Europe when he worked for
showman Cliff Fisher, who im
ported French girls for his show
at the Chicago World's Fair in
1939.
Other hotels in Las Vegas are
scrambling for chorus girls, too.
A Sahara spokesman says one
chorine has been graduated to
a singer so auditions are being
held for a replacement. And a
man at the Flamingo says, "The
pretty ones don't last more than
a few months they quit for
better jobs."
