Heat 4 tablespoons fat. Add 2 pounds tender steer beef, cut into 1 V4
inch cubes. Brown. Add bouquet garni (2 peppercorns, 1 bay leaf, 3
cloves, Vi teaspoon thyme, pinch cayenne, 1 ga'rlic clove, halved), 3
cans beef bouillon. Cover, simmer 1 hour. Add 1 pound small Irish
potatoes (or 1 pound can, drained), 1 bunch carrots, cubed, 81 0 small
onions, 2 tomatoes,' chopped. Simmer uncovered 40 minutes, or until
vegetables are tender. Remove spices. Combine 3 tablespoons each
flour, water, stew stock; blend, add to stew, stirring well.' Simmer
