Sourdough Redivirut ...
Arottnd five years ago I was
able to make a major move in
a long delayed plan to revive
the popularity of sourdough hot
cakes, biscuits and risin' bread.
6)Th ladies of St. Andrew's
church in Seattle made the move
possible by allotting me two
pages in a cookbook of Puget
Sound and Oregon Country re
ceipts, to describe the safe and
proper management of sour
dough. rr
But I was able to arouse only
an academic interest, as far as
risin' bread was concerned. A
parcel of young housewives in
formed me that modern yeast
was so sure and certain they
didn't want to risk the stirring
of husbandly anger by monkey
ing with sourdough biscuits.
Even the few remaining logging
camp cooks turned thumbs down
on the return of the oldtime
sourdough barrel. One and all
were yeast addicts.
But now the Homes Demon
stration Agents association is
holding its 1955 annual conven
tion in these parts, starting Oct.
9. More than 500 of these charm
ing and able ladies will come to
Seattle from the county offices
of the USDA Extension Service
and the Land Grant Colleges na-
tion-wide, to meet, discuss and
resolute, and to see and hear of
the worth-while features of the
nation's northwest corner.
The St. Andrews Recipe ...
n The book of recipes devised
by the church ladies five years
ago is certainly a fine education
al feature for the home demon
stration experts to know about.
To make it known is my own
. particular mission in the affair.
I'll tell the girls about sourdough
hotcakes first.
You can start a sourdough
batch for a dozen hotcakes with
one cup of flour, a cup of very
warm water, one-half teaspoon
of salt, one teaspoon of sugar.
Sift dry ingredients, mix with
water, adding more if needed,
but keeping batter stiff and
strong. Use a large crock, for
fermentation will double the
volume of the batch. Cover the
crock loqeely. Then let the batter
swell and bubble for a full 48
fhours in the warmest corner of
gthe domicile in 90 degrees of
heat, if possible.
In the eventide of the second
day scoop up a cup of Ihe risen
sourdough, mix it with a cup of
flour, and let this mixture stand
" overnight. Nett morning, whist
ling "The Frozen Logger" in
cheery notes, add a cup of warm
ish water, beaten an egg, sift in
yet another cup of flour to
which SODA, salt and sugar
haveAeen adde. For this batch
It takes a teaspoon of soda
no more, no less about a quar
ter teaspoon of salt, and a fat
pinch of salt.
Now beat 'er up with a hefty
iron spoon or the shank of a
peavey. It's tasty to work in- a
tablespoon of melted bacon fat.
The batter is fit to pour when
it is thick as heavy cream. Use
a smoking - hot griddle. Then
mix more flour and water in thel
sourdough crock for tomorrow's
hotcakes.
You Can Use Yeast ...
For sourdough bread and rolls

. way through . four cups of
water, etfc A yeast cake dissolv
ed in warm water will make
the sourdough ready to use in 12
hours instead of 48. Save a
fourth of the batch to prime
,the next batch. Stir into your
starter one tablespoon of melted
fat and cup of flour mixed with
a teaspoon of baking soda. Add
plain flour tthtil the mix will
not absorb any more, then work
the dough until it is silky to
the touch.
Make small loaves, set them
in a greased pan, keep in that
warmest corner for dough to
rise. When the loaves are swell
ed to about double the original
We it may take between one
and two hours, bake. With a
right hot oven the bread should
be baked in from 40 to 60 min
utes. Use the sliver system to
test it. Rolls should have dough
about three-fourths of an inch
thick, with 20 minutes to rise,
20 minutes to bake in a pretty
hot oven.

Weary Rescuers Dig
For Trapped Miner
Ely, Minn. (U.R) Rescue
crews worked around the clock
for the fifth day today in their
drive to reach a miner trapped
1.300 feet underground by an
iron ore jnine cave-in.
The weary task was pushed
forward, even though it was be
lieved positive Qhat the miner,
Joe Glinsek, 43, was diad by
this time.
Glinsek and two other miners
were trapped Thursday at the
Woneer Mine.
After 21 hours, the rescue
teams punched through tons
mud," ore and rock to reach Al
bert F. Marolt, 41, and Toyvo
Hill, 55.
Marolt and Hill said they had
lost contact with Glinsek shortly
after the cave-in and they be
lieved he had been crushed to
death.
