We, the undersigned, County Budget Committee for Jackson
County, Oregon, do hereby certify that the above is a true, fair
and complete estimate of the probable expenses of said County
for the ensuing year and probable receipts from sources other
than direct taxation upon real and personal property in its juris
diction during the ensuing year, and an estimate of the probable
unapportioned and unexpended balance in. the various funds as of
the last day of the fiscal year.
We further certify that the estimate of expenses of the various
institutions of the County, of the amount required for public
enterprises, roads, bridges, etc., and all other expenses of the
County as therein set out is just and based upon a careful study of
the expenses of the County during the past three and one-half
years, and a thorough examination of its probable needs during the
year for which such estimate is made. That each and every item
herein is believed to be necessary for the proper transaction of

Famed Cheese Spread
Is Popular Party-Goer
Often at a party, - guests en
thuse most about a cheese spread
that is served in a small Edam
cheese. For large parties, the hos
tess is likely to have several of
these on. tap . . . perhaps along
with beer which increases in pop
ularity as warmer days occur.
Advantages of this spread are
many. It can be made a day or
two in advance, then tucked in
the refrigerator. If all is not used
at one time, it can be returned
to its cold shelter to await fur
ther calls. No hunting for a re
frigerator dish since it is self
contained. Cut top from Edam cheese and
scoop out center with a spoon
leaving thin wall to maintain the
shape. Blend the scooped out
cheese with sufficient room tem
perature beer to make a smooth
mass of spreading consistency.
Then add Vfc teaspoon Worcester
shire sauce, Vi teaspoon mustard
and a good sprinkling of cay
enne. Some hostesses like to add
1 teaspoon each of chopped
chives and pimiento to the mix
ture. Replace mixture in shell
and chill. Serve with or on crisp
crackers or melba toast.
Ham Freeze? Specialists do not
recommend the freezing of ham
as freezing detracts from its
characteristic fine flavor. To
care for ham, cover meat to pre
vent drying and store in coldest
part of refrigerator until ready
to use. Do not slice, cut or grind
ham until just before using; to
do so influences flavor and tex
ture.
Ham-Asparagus Luncheon
Ham flavor blends so well
with so many things that most
cooks plan for ham leftovers.
Simply add two cups of cubed
1 cooked ham to a well seasoned
'medium white sauce; pour over
'cooked asparagus spears ar
ranged on hot toast. An excel
lent luncheon quickly prepared
at small cost.
Lemon io Avocado
Whenever a recipe calls for
both mashed avocado and lemon
juice it is a good idea to add the
lemon juice to the avocado as
you mash it. This keeps the avo
cado from darkening. Be sure to
select an avocado that is soft if
you want it to mash easily and
have excellent flavor.
Fresh Fish Fillets
Fine in Many Ways
Markets offer good variety in
nsn miets at small cost; not a
particle of waste, all good flavor
f ul eating. Be careful not to over
cook because overcooking de
stroys both nutrition and flavor,
Most popular ways with fillets
are these:
Pan Friend. Cover fillets all
over with seasoned flour. Fry in
about four tablespoons cooking
oil in heavy skillet until done; 8
to 10 minutes. Serve with Tartar
sauce.
Baked. Dip fillets in milk sea
soned with salt and then into
fine bread crumbs. Place in
greased baking dish, sprinkle
with oil or melted butter. Brown
quickly in hot oven. Serve with
parsley butter.
Broiled. Season with' salt, pep
per, paprika and lemon juice.
Brush with melted fat. Broil 5
to 8 minutes on preheated broil
er. Turn carefully, brush other
side and cook 5 to 8 minutes
longer, or until slightly browned.
Puffed Potato Slices
Every now and then we're
asked how to fix those puffed
potato slices. And here's how:
Select medium-size potatoes of
uniform size figuring one potato
per portion; pare and cut on slant
in even thin slices about one
eighth inch thick. Dry between
towels and fry, a few at a time
in medium-hot fat (275-300 de
grees) five minutes, keeping po
tatoes in motion. Lift basket and
plunge quickly (this is the secret)
into very hot deep fat (400 to
425 degrees) one to two minutes
or until puffed and browned,
keeping potatoes in motion.
They should puff at once when
dropped into kettle of hot fat.
Hold basket over kettle for fat
to drip, then turn out on absorb
ent paper to drain. Sprinkle with
salt; serve at once.
Scalloped Spinach
A delightful vegetable change,
so easily accomplished. Uses two
cups cooked spinch. If spinach is
left over, warm and put through
a sieve. Add two tablespoons
minced onion, one-half teaspoon
salt, one-quarter teaspoon pep
per, one slightly beaten egg and
one-half cup milk. Put in greased
baking dish and coyer with one
half cup buttered crumbs. Bake
in moderate oven, 350 degrees,
until brown. Takes about 15 min
utes. Will make six servings.
World Trade Week Throws Food
Spotlight on Imports-Exports
Fifty-one weeks of the year,
we talk about regional, seasonal
foods that are abundant in our
area (and you'll find the usual
list at the bottom of this column)
but today we highlight f bods that
are important in our west coast
economy because they are ex
ported or imported.
Let us contemplate for a mo
ment the ships carrying food
stuffs going and coming in our
harbors, the vast number of per
sons employed in the growing
and processing of these foods,
the folks involved in selling, the
office workers and the truckers
to name few. Our stake in im
ports and exports is vital to the
area in which we live.
Food Import. Among the
many products and countries in
volved in our west coast trade,
we find: Coffee from Brazil, Co
lombia. Central America: Tea
from Ceylon, Indonesia, India.
Cocoa from Brazil and Africa;
Coconut from Philippines. Cacao
(chocolate) from Africa, South
America. Central America: Suir-
ar from Cuba, Hawaii, Puerto
Kico, Philippines; Cheese from
France, Italy, Switzerland and
Argentina. Nuts from India,
Greece, Spain, Brazil; Bananas
from Costa Rica, Guatemala,
Ecuador; Spices from Ceylon, In
dia, Zanzibar, Malaya, Indonesia;
Pepper from Indonesia, Africa,
India; Vanilla from Madagascar,
Mexico, Haiti. Pineapples from
Hawaii and Philippines; Shrimp
from Baja, California. And many
others.
Food Exports. From our Pa
cific Northwest go vast wheat
tonnage, goodly supplies of ap
ples, pears, walnuts, -filberts,
canned salmon. From California
go fresh, canned and frozen cit
rus fruits, dried fruits, fresh
grapes, raisins, honey, sardines,
mackerel, chick peas, evaporated
milk, canned shellfish, refined
vegetable oils . . . and baby
chicks! To name a few major
items.
Local Meat, Poultry. Beef and
pork continue plentiful with gen
uine bargains in the longer cook
ing cuts of beef and in the bony

lywood's top pin-up photo girls
started work today as a female
Tarzan for a
TV series
with strict or
ders to dis
guise the sex
appeal that
once brought
her fame.
ABC - TV hit
such a jackpot
with - "Davy
Aline Mosby Crockett" that
the network already has another
children's show lined up for fall.
This one is a strictly fictional
series called "Sheena, Queen of
the Jungle."
The job of playing the mus
cular jungle girl who swings
through the trees went to the
darling of magazine photogra
phers, Irish McCalla.
Irish is known to any male
who ever eyed a cheesecake
photo in a magazine. The tall
(5'8") blonde has posed in bikinis
(39-24-37) doing everything from
canoeing down the Colorado
river to riding a merry-go-round.
High Neckline .
But as TV's new female Tar?
zan, Irish will climb trees, swim
and wear a peopard skin with a
high-cut neckline.
"We have to avoid all the pin
up stuff," Irish explained be
tween scenes of the filmed series.
"This is for kids. It the cleav
age ever gets too much in a
scene, I throw my hair forward
over my shoulders!"
Although men in the audience
might regard her tree-swinging
as a waste of cheesecake, Irish
insists she is overjoyed to get
out of the pin-up category.
"All my life I've been a tom
boy," the Pawnee, Neb., beauty
said. "Just because I'm built in
a certain way people think I'm
sexy. But when I was a model
2nd the photographer would tell
me to look sexy, I'd just start to
laugh.
"Actually I'm athletic. I was
a skin-diver when somebody
asked me to pose with skin-diving
equipment and that started
the pin-up career."
"Sheena" appears to be a west
ern series with tom-toms and
grass huts. Irish, her real hair
hanging to her waist, lives alone
in the jungle for some mysteri
ous reason.
There is, of course, a handsome
hunter in pith helmet who shows
up in some episodes. . But the
only member of the cast who
gets a kiss from Irish will be her
sidekick, a chimpanzee.
Irish leaves next week on a
tour of New York and Washing
ton where a build-up will start to
make youngsters Sheena-consci-ous.
In the merchandising field
little girls will be able to buy
Sheena shoes, jewelry and toys.
"I was the first and last person
of 200 tested for the part," she
said. "They almost signed Anita
Ekberg but she couldn't smile."
