When Jackson county's, extension
unit members held the annual officers
training meeting recently in Roxy Ann
Grange hall, the session did double
duty. Not only was the program out
lined for the coming year, and unit
problems discussed, but the county
Red Cross chapter took advantage of
the gathering to point out to the
women the necessity for learning
how to cope with disasters. This dis
aster training work has been under
taken by the Red Cross at the request
of civilian defense officials, and by
"disaster" the Red Cross means either
nature-caused or man-caused events.
During the morning session the ex
tension women, who were either sec
retaries or chairmen of their units,
heard a review of the state council
meeting, reports given by interna
tional relations, health and -safety"
and other committees,- and a review
of the coming year's program by
Miss Eula Wintermote, county home
extension agent.

ing program was Mrs. O. A. Eden,
Medford, vice-chairman of the Red
Cross disaster-training program here.

Extension work is a serious matter
to most of the women who belong to
the units in Jackson county, and the
secretaries and chairmen who attend
ed the officers' training session came
armed with notebooks and pencils,
and listened intently to every speaker.

During the noon hour the Red Cross
had arranged for a demonstration of
mass emergency feeding by the
women of Roxy Ann Grange Home Economics club. The women
who volunteered for the assignment prepared the nutritious meal
for more than' 80 people in an hour and 45 minutes and served
it, cafeteria style, in exactly nine minutes.
The meal which they served included baked beans, cottage
cheese and tomatoes, cabbage salad, bread and butter, fresh fruit

and vegetables and cookies. The committee facilitated the serving
by having everything on the table but the beans and beverages,
which were served cafeteria style. Those being served were expertly
lined up to pass by the food counter and at the end of the meal
were again efficiently prganized to return plates and silverware
to the kitchen.

It was pointed out that the women
had used only foods which they found
in their gardens or orchards or on
their kitchen shelves for the emer
gency meal.
During the meal Mrs. Katharine
Hall Chambers, disaster field repre
sentative for the Pacific area of Red
Cross spoke. She outlined some of the
conditions which might exist during
a disaster and asked her listeners!
"How would you prepare an emer
gency meal if, after an atom bomb
attack, all the water and milk, and all
exposed food is declared contami
nated?" Came the prompt answer
from her listeners: We'd use food,
fruit and vegetable juices from tin
cans and glass.

pleased at the success of the feeding
demonstration and afterwards were
'all smiles as they heard the praise of
the Red Cross officials who "were

After the luncheon demonstrations
were over, the extension women re
turned to their training session, and
on the afternoon program was instal
lation of the county committee by
Mrs. C. C. Hoover, a past chairman
of the committee. New members of
the committee are Mrs. Ira T. Burns,
Medford, and Mrs. E. E. Meyers,
Brownsboro. They are shown (upper
