Feeding the Family

Confetti Corn Is .
Heap Good Eating
According to Indian legend,
corn was a gift from the Great
Spirit. Even with the help of
the spirits, the Indians never
saw more luscious golden sweet
corn than that available right
now in your favorite market.
Make a colorful dish like this:
3 or 4 ears of corn
cups kernels)
3A cup finely diced celery '
.3 tablespoons butter or
margarine 1 '
3 tablespoons chopped pimento
or red or green bell peppers
i " teaspoon salt
yk teaspoon pepper
Boil or steam corn five min
utes., (Or use frozen corn or
niblets type canned corn). Cut
corn from cob. Cook celery and
peppers in butter for five min
utes. Add corn, peppers, salt and
pepper. Cook five minutes long
er, stirring occasionally. Serve
Immediately.
Beet Soup. Hot or Cold
Borscht or beet soup stems
from' the Slavic tradition where
flavors are sharp and exciting.
To a rich broth, add finely chop
ped beets together with their
juice, minced onion and a dash
of salt. Vinegar is blended in.
The result is a refreshing, tanta
lizing balance of sweet and
sour.
2Ji cups beets
13 cup minced onion t
1 can condensed consomme,
undiluted
1 cup water
,i teaspoon salt
6 tablespoons cider vinegar
cup sour cream
Cook and dice beets or use a
No. 2 can, reserving Vi cup beet
juice in ; either event. Finely
chop the beets. Combine with
beet juice, onion, soup and wa
ter. Heat thoroughly but do not
boiL Add . salt and vinegar.
Serve hot or chill thoroughly.
Top each serving with 1 table
spoon sour cream. Makes 5 or
6 servings.
Western Ham and Egg Special.
Sandwiches to take or to toast
and enjoy at home. In skillet,
fry cup diced ham, Va cup
chopped green pepper, V cup
chopped onion. Combine 3 slight
ly beaten eggs, 3 tablespoons
milk, salt, pepper and mustard
to taste. Pour into pan; brown
lightly. Turn and brown other
side. Cut into quarters. Put be
tween plain or toasted slices of
rye bread.
Duck or Chicken Hawaiian
This super recipe was really
perfected for duck, but we tried
it with chicken, and believe us
there is nothing the matter with
Chicken Hawaiian. Duck is now
available the year around in
either local fresh supply or
frozen. Chicken of course is
readily available at reasonable
prices.
1 4-pound duckling or fowl
V4 cup salad oil or other fat
- tablespoon cornstarch ,
Vz teaspoon salt
1 teaspoon soy sauce
teaspoon powdered ginger
J4 teaspoon onion salt
IV2 teaspoons curry powder
1 cup chicken broth
or chicken bouillon
1 cup pineapple juice
23 cup water .
1 cup pineapple cubes or
wedges
1 bunch green onions, cut in
1-inch pieces
Cut duck or chicken into serv
ing pieces. Brown in "oil. Place
in greased baking pan or- cas
serole. Mix cornstarch and sea
sonings and make into a paste
with a litle chicken broth. Add
remaining . ingredients except
green onions. Pour over duck
or chicken.
Cover and bake in. moderate
oven, 350 degrees, H4 to 2
hours. Add a litle more water
if necesary. Ten minutes before
duck is done, sprinkle green
onions on top. Finish baking.
Serve with rice garnished with
sprinkling of toasted shredded
almonds. Serves 4 generously.
For a delightful accompan
iment for many meats, especial
ly ham, these are recommended
highly. Just boil cup vinegar,
2V2 cups sugar, 2 dozen whole
cloves and a stick of cinnamon
until sugar is dissolved ' and
syrup thick. Then drop the ba
nanas into the hot syrup and
boil for two minutes. Remove
from fire, cool and serve ba
nanas whole or cut. Strain and
save remaining spice sauce for
next batch of spiced bananas.
Curry Favor With This. A
good tip from an Hawaiian cook
is the use of V4 to V2 teaspoon
curry powder for 3 pounds of
fish in any fish casserole recipe.
And some curry powder in the
pickle jar when you're pickling
is definitely .worth remember
ing: one teaspoon to a pint jar
is about right.

and grapefruit. Pineapples are
available at reasonable to high,
prices.
-Vegetables are abundant and
of excellent quality. Tender ears
of golden corn just right ' for
roasting or 3 to 5 minute boil
ing. Cucumbers, lettuce, toma
toes, green onions, radishes, cel
ery and! cabbage are all on the
list of .: good buys. For further
variety in the vegetable line we
find spinach, an assortment of
squashes, cauliflower, and car
rots at moderate prices. Green
beans, fresh peas and eggplant
are available.

Emanuel Celler said Friday Con
gress had better go easy with
its "dirty book" investigation or
it may wind up outlawing the
Holy Bible.
"There are a lot of references
to incest in the Bible," the New
York Democrat said, "and every
one knows that a high life was
led by David, the giant-killer."
Celler feared the works of
Shakespeare, Chaucer and other
policy to enjoy a succulent and
savory turkey dinner at least
every other week, and some
times more often.

just naturally good to eat. They

graphic movies rounded up by
Gathings to demonstrate just
how widespread smut has be
come. They also have poured over
other Gathings' samples like
playing cards decorated with
nude ladies, magazines featuring
full-page "art" photos of draped
and undraped girls in a variety
love story bedroom scenes.
Gathings had said the com
mittee plans to hold open hear
ings later and that some of his
collection will be put on public
display.

MAMMOTH IN NEBRASKA
Dawson, Neb. (U.R) A pale
ontologist from the University of
Nebraska identified remains
found on the Nemaha river near
here as those of one of the early
mammoths. Lloyd Tanner guess
ed that the animal lived about
35,000 years ago when Nebraska
was populated by giant elephants.
A bidentate animal is one with
only two teeth.
