For a dessert that will make a

a Fresh Apricot Upside Down
Cake. For the cake you will
need 3 tablespoons butter; V2
cup brown sugar, firmly packed;
apricot halves; V2 cups enrich
ed all-purpose flour; 2 teaspoons
baking powder; V2 teaspoon salt;
3A cup sugar; V4 cup soft short
ening; 23 cup milk; 1 teaspoon
vanilla and 1 egg
Melt butter in 8" square cake
pan;' combine with brown sugar.
Cover with apricot halves, cut
side down. Sift flour, measure;
sift with remaining dry ingred
ients into mixing bowl. Add
shortening, one-half the milk
and egg. Mix until flour is damp
ened; then beat 1 minute. Add
remaining milk and vinilla"; beat
1 minute. Pour batter over fresh
apricots, bake at 350 40 to 45
minutes.
