baking contest sponsored by the
National Red Cherry institute.
I he president wasn t home
when Miss Hanneman called at
Blair House, pies in hand. An
assistant accepted them with
thanks and said he would see
the chief got them.
I hope he did. Mr. Truman
missed something if he didn't
sink a tooth into one of those
goodies.
Miss Hanneman, 17, said there
are ways and ways to make a
good cherry pie. Her way is the
best in the land, as of now.
The young lady made her first
pie at the age of 12.
"It was an apple pie," she
said. "It fell kind of flat on top.
The second was a cherry pie.
Last year the champion cherry
pie baker got on the radio and
said her favorite pie was lemon
meringue. I'm being honest when
I say mine is cherry.
Pies More Fun
Jacqueline, known to her
friends as "Jackie." thinks it
is a lot more fun to bake pies
than cakes. You don't have to
tippy-toe around the house with
a Die in the oven. It would take
an A-bomb almost, she says, to
make a pie fall, whereas a cake
will fall at the drop ol a foot
ball. Jackie, once she gets her pans
and things out, can whip up a
pie all ready for the oven in 15
minutes. Once stuffed inside, the
baking business takes 45 min
utes, which is considered par for
the course.
Here is the young Indiana
lady's recipe for a cherry pie,
which she admits she makes
from cherries grown in Michi
gan. Don't Greaio Pan
"First, don't grease the pie
pan. Measure sifted flour. Add
salt, sift again into mixing bowl.
Cut one-half the lard Into the
flour to a corn meal consistency
using a pastry blender. Cut in
remaining lard and blend to the
size of large peas. Add cold milk,
using a fork to blend ingredi
ents. Place on folded wax paper,
and work slightly until ine par
ticles hold together. Divide the
dough Into two parts with a
little more for the lower crust
than the upper crust. Place the
dough for lower crust on floured
pastry canvas and roll dough
from center out until it is Is
inch thick. Fold crust in quar
ters and place in pie pan. Trim
.crust. Roll upper crust In same
manner, then cut a few slashes
in it."
Three Cups of Cherries
The ingredients, or fillings, in
clude three cups of drained
cherries, V cup juice from -the
cherries, one cup of granulated
sugar, five tablespoons of pastry
flour, V teaspoon of salt, V
teaspoon almond extract, and a
teatpoon of butter.
You drain the cherries, meas
ure three cups and add '.4 cup
of juice, then you measure and
sift the sugar, flour and salt
together. Add this to the cher
ries and stir lightly. Add the
almond and stir some more.
Pour this into a pastry lined
pan and dot with butter. Wet
the edge ef the lower crust with
cold water and place the upper
crust over the pie and trim it
to within a quarter of an inch
of the pan. Turn the edge of
the uppercrust under the edge
of the lower crust and crimp the

Employment Rising .
February Total High
With employment throughout
the state showing an unusually
early upturn after the winter
slump, the state employment
service reports that Medford s
unemployment figure at the
first of February was still about
one thousand higher than at the
same time last year.
On February 1, 1949, there
were 2,700 out of work here
while at the first of this month
the employment service listed
3.R00 idle workers, including
500 women. Since that time,
however, improved weather has
given impetus to construction
and agriculture and the lumber
industry has felt a new surge of
activity.
