under the draft
and the del
icacy and
weak ness of
growing chil

mary cause of
this physical
unfitness is nu
t r i t ional de

least half of the calories in the
modern American diet are from
refined carbohydrate foods
items made principally of white
flour and white sugar and vari
ous dishes and drinks to which'
sugar is added. In fact white
sugar alone of which the aver
age weekly consumption is two
pounds per person yields more
than enough calories for an
adult doing light work for a day.
One who consumes such pro
portions of the refined- car
bohydrate foods requires actual
ly more vitamins, particularly
vitamin Bl (thiamine) to meta
bolize or utilize the food com
pletely than he or she would
need if the diet were better bal
anced. . In other words, if one
eats an ounce of plain wheat it
will yield virtually the same
number of calories as an ounce
of white flour yields, but be
cause the plain wheat contains a
considerable amount of thiamine
(among other vitamins and min
erals) it will be more completely
metabolized and utilized than
white flour is, because virtually
all of the vitamins and minerals
are removed in the milling proc
ess. Plain wheat and things made
of it therefore belong in an ade
quate diet- adequate to main
tain good nutrition.
And 50 does milk.
It is possible, I suppose, but.
extremely difficult, I know, to
keep one's diet adequate withput
including at least a pint, or bet
ter 1 Vi pints, of milk daily. Milk
or its equivalent in milk prod
ucts such as butter, cheese,
skim milk, cream, buttermilk,
sour milk, cultured milk (Bul
garian, Acidophilus, yoghourt)
custards, and other dishes or
drinks containing much milk.
For one thing, milk and its
products constitute the best food
source of calcium and phosphor
us, elements in which the diet of
most Americans is notably lack
ing, in childhood, youth and old
age.
A pint of milk (two glassfuls)
yields 320 calories it would re
quire from 8 to 10 glasses of
milk a day to keep an adult on
exclusive mild diet from actual
ly losing weight and vite, and
considerably more if the indi
vidual were taking much exer
cise or doing much work. In oth
er words, milk is "fattening"
only if or when one takes it in
addition to the ordinary or usual
diet on which one has not gained
