Association Formed
The board of directors of the
recently organiied Jackson coun-
. ty Livestock Marketing Associa
tion met on November 6 and de-
. elded that Saturday, Nov. 17,
would initiate the first shipment
of livestock from the county.
The Dlace of assembling stock
has not yet been established but
' it is expected that this will be
' 'done within the next day or two.

AAA Not Affected
By Consolidation

equal to the 194S spring pig
crop.
Under the price support pro
gram, seasonal variations are be
ing applied for the first time to
hog prices. This means that the
$12 average Chicago hog support
price will vary according to nor
mal seasonal changes in hog
prices, ranging from $10.75 in
December, 1946, to $13.25 in
September, 1947. The present
support price, $13 per hundred
pounds at Chicago with no sea
sonal variation, was announced
May 21, 1945, to be effective un
til September 1, 1946, and is now
extended to September 30, 1946.

Turkey Roasting
Techniques Told
With a record-breaking crop of
turkeys headed for the open
market and holiday celebrations,
it is a good time for turkey
hungry homemakers to brush up
on roasting techniques.
For roast turkey, they say,
choose a young, tender bird,
with a generous coating of fat
under the skin. Other clues to
roasting quality are a well-rounded
body, a well-fleshed breast,
few blemishes, and few pinfeath
ers. Draw and groom the turkey,
and sprinkle the inside of the
body cavity with salt. Then put
in the stuffing, being careful not
to pack it too tightly it will
need room to expand as it ab
sorbs juices that cook out of the
bird. Finish off by slipping the
heel of a loaf of bread, or some
other large crust, into the open
ing to hold stuffing in place.
Tuck the legs under the band
of skin at the tail, and secure
them in place by taking a stitch
at the end of the breastbone and
wrapping the cord around the
legs and under the tail. Stuff the
loose skin at the base of the

stitches. Rub the bird all over
with fat and a little salt and
pepper.
A shallow, uncovered pan is
best for cooking a young tur
key. Place a rack under the bird
to keep it from sticking and to
allow hot air to circulate. The
broiling tray and rack of some
ranges can be used, though the
size of the tray interferes with
the circulation of air and is like
ly to slow down cooking time.
When using a very shallow broil
er tray, pan drippings must be
poured off from time to time,
as they cook out of the bird.
Start the turkey cooking breast
down. Don't put water in the
bottom of the pan when cooking
a young bird. Steaming breaks
the skin and forces juices out of
the meat, and is not necessary

when the bird Is young and fen
der. Cook at a moderate tempera
ture. Like other meats, poultry
is toughened and hardened by
intense heat. The larger the tur
key the lower the temperature,
is a good rule of thumb. A 10 to
13 pound bird will take about
3Vi to 4V4 hours at 300 F. A
larger bird, 14 to 17 pounds,
requires about 5 to 6 hours at
875' F. However, no hard and
fast rules about cooking time can
be given some birds cook fast
er than others.
Baste frequently with pan
drippings or some other well
flavored fat. Baste a small or
medium-sized bird every 30 to
45 minutes, a larger bird every
hour. Turn the bird every time
it is basted, lifting it at head
and foot, with a clean, white
cloth to protect the hands. This
will keep parts standing high In
the oven from cooking faster
than the rest.

Atomic Bomb Developer Warns U.S.
To Keep Secret Until World Better
New York, Nov. 8 (U.PJ The
United States, as "a principal
exponent and defender of demo
cracy," must retain the atom
bomb secret until the world can
substitute a rule of intelligence,
morals and law for that of force,
Maj. Gen. Leslie R. Groves, in
charge of the bomb's develop
ment, said today.
Speaking on "atomic power
and world peace" in the 5 1st
annual Town Hall lecture ser:es,
Groves declared that the same
misgivings about atomic power
existed before the first bomb
was dropped. These fears, based
on man's "knowledge that exist
ing conceptions of human wel
fare are inadequate for the pres
ervation of peace," still exist,
he said.
But, citing the American atti
tude, Groves asked:
"Were we not in agreement
with our allies that the United

peace-loving nations had to re- j

other powers who would seek to j

"This must still be our fixed

Southern Pacific crews today
were attempting to clear main-i
line tracks for eastbound traffic
after operations were delayed
by the derailment of a freight
train near Donner summit. The
accident, which occurred yester
day morning, sent two engines
and 11 freight cars off the track
and tore about 75 feet out of a

Jackson county loggers will
be featured on the program of
the seventh annual Willamette
Valley Logging conference at
Eugene, Nov. 18-17, when log
gers from all over western Ore
gon meet in the first post-war
session to discuss logging and
forestry problems for the years
just ahead. Anton Lausmann,
Tiller Mill and Lumber com
pany, is on the program, as well
as Charles Tebbe and Austin Mc
Reynolds, former forestry of
ficials of this county. Advance
reservations indicate this will
be the heaviest attended of any
of these western Oregon logger
get-togethers, according to H. J.
Cox, secretary of the conference.
Colonel W. R. Greeley, nation
ally prominent forester, will give
the main address at the annual
loggers' banquet on Friday, at
which Roy Morse, Longvlew
logging superintendent, will be
toastmaster.
New logging equipment and
new logging techniques will be
among panel discussions present
ed to the conference, reports
Captain F. L. Thompson, Albany,
president. Truck road construc
tion and truck road transpora
tion will draw a lively discus
sion from the floor. Where will
new loggers and foresters come
from, is the topic of a talk by
Walter F. McCulloch.
