for
this happy
change is simple. Through the
efforts of the health authorities
in the region iodized salt has
been Introduced into popular
use both in cooking and at table,
in place of ordinary salt, so that
everybody who uses salt gets at
least a tiny bit of iodine, an
element which Is essential for
good nutrition and good physical
and mental health and in which
the soil and water and the food
grown in the Great Laes basin
happen to be deficient.
For a while when this iodized
salt program was first put into
effect certain "surgeons" con
trived to break Into print with
warnings against indiscriminate
use of iodized salt, which they
arbitrarily asserted, would cause
or aggravate a state of hyper
thyroidism (exophthalmic Or "in
ward" goitre, or "toxic" goitre)
in many instances. Of course
the born specialists were wrong
about that the experience of
many hospital centres in the
Great Lakes basin has been quite
to the contrary, that is, the num
ber of cases of exophthalmic goi
tre coming to operation has de
creased considerably since the
use of iodized salt became popu
lar custom.
Even if you live In a region
where there still is an appreci
able trace of iodine in the soil,
water and the food (vegetables,
fruits, cereals, milk, eggs, meat)
grown on the soil, you are by no
means certain to get enough

iodine from drinking water and
food alone, for iodine as it occurs
in water, soil and food (iodides
or organic or inorganic chemical
compounds or iodine) Is so very
soluble that much of it may be
leached or dissolved out of the
soil and carried away in water
or it may be dissolved out of
food into the cooking water.
Even if one uses iodized salt
exclusively, both for cooking and
as a table condiment and habitu
ally consumes as much or more
salt than the average, It is still
questionable, in my judgment,
whether this source alone is suf
ficient to supply the amount of
iodine that is essential for nutrl
tion. A whole pound of such
iodized salt contains only about
a grain of potassium iodide or
sodium iodide, equivalent to less
than a quarter of a grain of ele
mental iodine. The average per
son consumes a pound of salt in
six to eight weeks. So, although
we have used iodized salt exclu
sively for manv years I have al
ways taken an extra nip of io
dine two or three times a ween
to make sure of getting an ade
quate ration, and, from reports I
have received from thousands of
readers who follow this practice
I believe this is not only bene
ficial to most persons but harm
less for any one who Is not under
medical care.
