son passed away at her home, 16
Ross court, early Wednesday
morning after several months'
illness.
She was born In Central
Point, August 8, 1893, a daugh
ter of Professor and Mrs. J. W.
Merritt, early pioneers of south
ern Oregon. She attended grade
school in Central Point, then St.
Helen s nail, Fortiana, ana com
pleted her education at Anna
Head school, Berkeley, Cal.
While living in Berkeley she
was united in marriage to B. L
Sanderson, who survives. They
moved to Tacoma, Wash., re
maining there until 1922, when
they returned to southern Ore
gon. She had been a member of
the Presbyterian church most of
her life and was a member of
the Eastern Star, Nevita chap
ter, Central Point.
Surviving, besides her hus
band, is a son," John, with the
U. S. army overseas, and
brother, George H.- Merritt,
Jacksonville.
Services will be In the Con
ger-Morris chapel at 2:30 p. m
Friday with the Rev. Harry Han
sen officiating. Interment will
be in the family plot in Jackson
ville cemetery.

A Lot To Do
About Ground Heat
There's a difference in the pan-frying and broil
ing times for the various kinds of ground meat.
Beef and veal require the same cooking time but
lamb and pork take a bit longer. When tiro or
more kinds of ground meat are mixed together, "
the time is gauged by the kind of meat in the
largest proportion. However, when there's fresh
pork in the combination it'a advisable to follow
the timing given, for pork must be cooked thor
oughly. GROUND BHP AND VIAL
Because of their leanness, ground beef and veal
are benefited by the addition of fat or liquid, such
as suet, eggs, or evaporated milk. Eggs and evap
orated milk also act as binders to help hold the
ground beef and veal together after they're
cooked. ' ,
Tests show the best results are obtained by using
2 eggs or 4 tablespoons of evaporated mUk or 4
tablespoons of suet for each pound of ground
beef or veaL 14 pound beef or veal pattie,
broiled or pan-fried, should be cooked about. 10
minutes 6 minutes on each side.
GROUND LAMB
It isn't necessary to add any binding ingredients
to ground lamb for it holds its shape when
, cooked. However, the addition of a little chopped
bacon contributes a delectable flavor and adds
the fat that is needed.
For patties and mock cutlet and chop of aver
age thickness that are to be pan-fried or broiled,
it is best to allow about 30 minutas 15 minutes
for each 'aide.
GROUND niSM PORK
Ground pork is often confused with fresh pork
sausage. The difference lies in the fact that saus
age contains spices and soaeoninp while ground
fresh pork does not.
A binding ingredient or extra fat is not required
for ground pork because it is tender and juicy
enough without any additions.
It takes at least 20 minutes for pan-frying or
broiling of fresh pork patties of average thickness
and it is important that they be well don
throughout.

meat, H cup finely diced onion, in 2 tablespoons
shortening until meat and onion are browned.
Break meat apart aa it cooks. Blend in 4 table
spoons of flour, season to taste. Gradually add S
cups milk, stirring constantly. Cook until thick.
Serve on toast cubes, in pastry cases, in noodle
ring or over steamed nee. Serves 6.
