In a healthy person the saliva
contains a digestive enzyme or
"ferment" called ptyalin, which
converts cook
ed starch into
maltose (a
type of sugar)
which in turn
is c o n v ertcd
into dextrose
after the food
r e a c lies the
intestine, and
that is the
form in which
all c arbohy
drate food
Dt Brady (starches or
sugars) is absorbed and utilized
for heat and muscular energy.
How important this part of
digestion is for good health and
physical efficiency is hard to
realize.
The chewing process in the
mouth thoroughly mixes food
and saliva or should do so
but the bolus is swallowed too
quickly for the ptyalin to com
plete its action on carbohydrate
food. In the stomach the gas
tric juice is sufficiently acid to
destroy the ptyalin or to arrest
its action (ptyalin requires neu
tral or alkaline medium, as in
the saliva). It was therefore
supposed formerly that salivary
digestion ceased when the food
entered the stomach and hence
is of little value in the digestive
process.
We know better now. We
know that a considerable part
of an ordinary meal may remain
in the cardiac or tipper portion
of the stomach for the first hour
or more after the meal, com
pletely shut off from the acid
secretion in the lower or pyloric
end of the stomach, so that sali
vary digestion continues for
nearly an hour in the stomach.
There are other good reasons
why it is essential to chew such
foods as vegetables, greens, ce
reals and breads made from
them, fruits and nuts well be
fore gulping them down or
washing them down with bev
erage, but we haven't room to
enumerate them here.
It would not be so serious if
the loss of a single tooth or may
be a couple of teeth entailed
merely a 3 or 6 deficiency
in mastication. If the missing
tooth or teeth are not promptly

replaced with functionally effi
cient dentures the entire align
ment, bite or occlusion of the
teeth is bound to suffer change
in the course of weeks or
months, and the masticating
function becomes thereby far
more than 3 or 6 deficiency.
It might not be so serious, for
a year or so perhaps, if the de
ficient mastication and deficit
salivary digestion entailed only
the annoyance or discomfort of
"dyspepsia", "acid indigestion",
"gas", "nervous indigestion"
and the like. But that's only the
lighter side of it.
It is from the foods above
mentioned that we get most of
the vitamins and minerals re
quired for good nutrition if we
get them at all. If mastication
of such foods is deficient we
just don't get the vitamins and
minerals from the foods we eat
if the diet Includes adequate
proportions of such foods.
And so, loss of teeth spells
nutritional deficiency, and nu
tritional deficiency, in the great
majority of cases, goes unrec
ognized or masquerades under
some meaningless or misleading
name which suffices to satisfy
the curiosity of the victim re
garding the nature of his trou-'
ble.

of the most expensive bonfires
this city has ever had burned
today when two boys, 11 and 10
years old, burned $2700 In war
bonds and postal savings certifi
cates which they assertedly stole
from Jacob Zornndo, war plant
worker.
Police said the boys took the
securities from a metal box in
7.nrando's basement, along with
$350 in cash, and burned them
on a vacant lot. The police were
able to rescue five of the bonds,
worth $350, and most of the
cash.
Ashes of the burned bonds
were turned over to the FBI and
the boys were turned over to
