yeast used in baking) ordinarily
comes in a powder form. It is
far richer than
the live yeast
used for leav
ening, and it
dees not cause
f e r mentation
when taken
internally, as
live yeast
does.
Dried yeast,
the fermenta
tive action of
which has

heat, is richer In most of the
known components or factors
of the vitamin B complex, par
ticularly Bl (thiamin), B2 (G or
riboflavin) and nicotine acid
(niacin, anti-pellagra factor)
than any natural food.
In sections of the south where
pellagra has been prevalent the
health authorities have encour
aged the sale of dried yeast
powder in bulk by groceries
and other stores so that people
could buy it and consume fair
quantities of it every day to
prevent or cure early or mild
pellagra.
As Dr. Jas. S. McLester points
out, in his book Nutrition and
in Health and Disease (Saun
ders, '39), yeast if it is to be
effective, must be taken in what
may be regarded as enormous
quantities. "We have found it
of advantage to give 180 to 270
Gm. (one-half pound, more or
less) of powdered brewers' yeast
pellagrins. This is best tolerat
daily in the case of severely ill
ed when given in iced milk or
eggnog in doses of about 20
Gm. (rounded tablespoonful)
each."
Fresh liquid brewer's yeast
is perfectly good for leavening
dough if it is procured from the
brewery at least twice a week
and kept refrigerated until it
is to be used. Applied comfort
ably warm, as a poultice
gauze pads copiously saturated
with the fresh liquid yeast,
changed twice daily, it is an ex
cellent remedy for old indolent
varicose ulcers oif the leg; it
stimulates the healing process
and cleans up the ulcer. The
applications should be con-

The last bag of surgical dress
ings has been placed in the sur
gical dressing thermometer in
Lantis & Johnson's window, in
dicating that the quota of 210,-
000 surgical dressings has been
completed, reports Mrs. Gus
Newberry, county chairwoman
of surgical dressing.
This is a large quota to be
made in three months, and I
think the Red Cross workers of
Jackson county, which also in
clude the workers of the units
of Ashland, Phoenix, Jackson
ville, Central Point, Eagle
Point, and Gold Hill reserve
some word of appreciation for
the many hours they have put
in; and while our work is not
over, yet we do feel that they
have earned a short rest.
The workroom in the court
house will be closed until the
19th. of September ,all units,
too, wlil be taking the two
weeks vacation.
For their loyal support in this
work the chairwoman wants to
thank all the women and four
men workers, who by the way
have made very dressings and
has been very regular in their
attendance at the night classes.
1 want also to thank Lantis &
Johnson for permitting us to
use their windoj for our ther
mometer. The next quota is now In the
workroom ready ft r us 'to start
on after our vacation.

normal skin. At each change of
poultice or dressing bathe the
ulcer gently by allowing com
fortable warm salt solution to
run over it for a few minutes
heaping teaspoonful common
table salt in quart of water.
It is not difficult to take small
amounts of dried powdered
yeast straight every day. When
it comes to taking several
ounces of it every day, various
expedients to vary the taste or
the monotony may be em
ployed. Taking It stirred in ice
cold milk, in egg nog, in tomato
juice are welcome variations.
The dried yeast powder may be
taken sprinkled over cereals or
added to bouillon or other
soups, or mixed with catsup in
a cocktail. One palatable way
is to mix one-fourth pound of
dried powdered yeast thorough
ly with a pound of peanut but
ter this is stable, palatable,
low in water content, highly nu
tritious, especially if the pea
nut butter contains some
chunchy bits of the peanut

Dangers of Sulfa Drugs
Recently you referred to iiie dan
gers in taking sulfa drugs. 1 have
been taking sulfa (something or other)
as prescribed by a physician for sev
eral months. U. G.)
Answer Little danger if you are
constantly tinder your physicians ob
servation. People taking sulfa drugs
should not drive cars or keep at any
work involving responsibility. They
should not sign contracts or make any
serious decisions involving their af
fairs. Sulfa drugs sometimes r.enously
impair the faculties for a while. One
taking a sulfa drug should remain
quiet. If not In bed. for a week after
the drug has been discontinued.
They Never Get Me Down
Keep up the good work. You prob
ably 'feel discouraged at times. Don't
let them get you down. For every
carper who complains I'll wager there
are a thousand readers who have a
warm spot in their hearts for Or Doc
Brady who. I observed when I visit
ed your bowling green one day last
winter, Is kidding us about being old.
