BUTTERMILK AND SKIM MILK
A quart of buttermilk or a
quart of skim milk has lust one
half tho nutritive value (meas
ured in calor
ies of energy)
of a quart of
fresh whole
milk.
When milk
(or cream)
sours naturally
it does so be
cause the lac
tic acid bacilli
naturally pres
ent In milk
ferment the
Dr Brade lactose (milk
sugar) naturally present In milk,
producing therefrom lactic acid.
Naturally sour milk is the
same as buttermilk In that re
spect, except that most of the
cream (butterfat) has been re
moved from the milk product
known as buttermilk.
Skim milk is the milk product
that remains after the cream has
been removed. Skim milk Is
highly nutritious even though
about half the calorics In pure
whole milk are In the cream,
the butterfat. Skim milk, like
buttermilk, Is still a valuable
source of protein and sugar, cal
cium, phosphorus, vilnmln G
(riboflavin). It Is as sensible and
sound to throw away refined
white flour or white bread or
feed it to the pigs as it is to
throw away skim milk or feed it
to the pigs.
The milk product left after
the fat has been removed from
the freh milk by separator Is
practically the same as tne milk
product left after fresh milk has
been allowed to stand until I
cream rises and the cream is
skimmed off. But the so-called
"buttermilk" which Is manu
factured bv a process of working
a few particles of some kind of
fat or oil Into skim milk or sep
arator milk and perhaps doctor
ing it a bit wilh a culture of lac
tic acid bacilli to give it more
or less the flavor of real butter
milk (from the churn) Is not-, In
my opinion, a fair substitute
for natural buttermilk.
Natural buttermilk is a whole
some, nutritious, healthful bev
erage for children and adults.
It serves every purpose that
acidophilus milk, or any other
want thereof, the plaintiff will
apply to the Court for n decree
for the relief ricmnnded In her
complaint, succinctly stated as
follows, to-wll:
