Dr Brady
sources of vitamin A such
cheese (genuine, not processed)
milk and milk products, animal
liver, kidneys, egg yolks, most
of the $reen and yellow vege
tables, tomatoes and tomato
juice (fresh or canned), ripe ba
nana. Not only whole milk, but
also cream, skim milk and but
termilk (genuine) and skim milk
(too often regarded as unfit for
human nutrition) are good food
sources of vitamin A.
In recent years a gredt many
margarine manufacturers, with
permission of the government,
add what I consider an Insignifi
cant dab of vitamin A 9000
units per pound to their prod
uct. I regard 1V4 ounces of but-
er or oleomargarine or other fat
as a pretty hefty quantity of fat
to take in a day, over and above
the oil or fat you get in other
food, but one would have to
tamp in that much of this doc
tored oleomargarine to get even
1000 units of vitamin A the
amount of vitamin A one gets in
about a pint of milk.
Although there are brands of
oleomargarine that keep well
under ordinary conditions with
out any chemical preservative,
most kinds are doctored with so
dium bonzoate to retard spoilage
under ordinary conditions. Mak
ers of these products justify the
aaamon or the chemical pre
servative by citing what they
say Is the finding of government
exnerts that up to seven grains
a day may be consumed by any
body with Impunity.
Far be it from me to ques
tion that finding but if I can
find oleomargarine without so
dium benzoate and without add
ed vitamin A, I'll select that
kind, if you don't mind.
If I can't find margarine free
from sodium benzoate and added
vitamin A, then I'll grit my
teeth and incidentally I still
have 32 teeth to grit with (a fair
number of them my own) and
go back to butter, even if It costs
25 more. So far as taste goes
I'd as soon have oleomargarine
as butter.
