Fowler, County Agent 4-H Mobilisation Weak In Jackson County Jackson county will nave completed very successful Mobilization week by Saturday of this week. Nine new clubs will be organized and ready to to to help in the war effort These clubs are four health, four livestock and one sewing. Many - more are In process of organiz ing and will be operating as an organized unit by March 1. Leaders Conference Omitted This Year Because of crowded condi tlons and travel restrictions no state leaders conference will be held in Corvallis this year. A county conference has been called by the Jackson County 4-H Leaders' association for Wednesday, February 17. The association is headed this year by Grant Nelson of Medford. The meeting will start at 10 a. m. and end about 3:30 p. m. A basket lunch will be held at noon with the association furn ishing the coffee and sugar. State leaders from Corvallis will be there to aid in the dis cussion. Cluba in the war ef fort will be the main topic. A speaker haa been aecured for the luncheon. All leader and others Interested are Invited to attend. Coming Events Among The 4-H Clubs Fern Valley croup will hold a pie social and entertainment at 8 p. m. Thursday, February 11 at the schoolhouse. The public is invited. Evans Creek clubi will or ganize Friday, February 12 at 2:45 at Wimer school. Foots Creek Livestock club will organize Saturday, Febru ary 13 at the home of Arthur Smith at 7:30 p. m. Leaders conference all day, Wednesday, February 17. Miss baa line Stohr, home economist with the National Livestock and Meat board, gave the Medford home- makers a great deal of assist ance In meat cookery at the de monstration last Friday at Junior high school. She emphasized the basic principles of cookery that will help to stretch the meat supply by preventing ex cessive low in cookery. In general, the tender cuts of meat are cooked by dry heat that Is, they are cooked In an uncovered pan with no water added. . Veal and pork chops and steaks are exceptions because they are always cooked by moist heat The less tender cuts are cooked by moist heat by brais ing that Is, brown the meat in a heavy kettle, then add a tight fitting lid and add a small amount of liquid if necessary. Pork chops should be braised without added liquid. Another moist heat method- cooking In water la used for soups and stews. Cover the meat with water, cover kettle closely, and cook at simmering temperature until tender. Cook all meats at a moderate temperature In order to retain flavor and food values and to prevent excessive shrinkage. Avoid overcooking (or the same reasons. Miss Stohr demonstrated sev eral dishes and we thought these two especially good. Scotch Pancakes Serves 6 2 cups cooked oatmeal. 2 cups ground cooked meat 2 eggs. Salt Pepper. 2 tablespoons lard or drip pings. Combine oatmeal, meat, eggs and seasonings. Mix thoroughly. Fry cakes, using one tablespoon ful of mixture for each. In small amount of hot fat Serve with tomato sauce or syrup. Tasty Lamb Stew Serves 8 2 pounds lamb stew meat 2 tablespoons lard. 2 teaspoons salt i W teaspoon pepper. 2Vi cups water. 1 onion. i cup tomato Juice. 8 potatoes. 4 parsnips. 8 whole carrots. 8 pieces celery. 6 sprigs parsley. 2 tablespoons flour. Brown meat In lard. Season, add water, onion and tomato juice. Cover and simmer one hour or until meat is nearly done. Prepare vegetables. Cut potatoes in half and quarter the parsnips. Add all vegetables to stew. Sprinkle with remaining seasonings. Cover and aimmer until vegetables are done, about 45 minutes. Pile meat and vege tables on chop plate. Make a paste with flour and small amount of water. Use to thicken gravy. Serve gravy separately. The Extension service is do ing Its part in offering material on "Use of Meat Alternates." Miss Lucy Case will be in Med ford to train project leaders on March 2. These project leaders will then present this demons tration at all extension units during- March.
