1 pound ground veal (economy cut
1 teaspoon lemon Juice
M teaspoon salt
4 teaspoon paprika
H teaapoon celery salt
M teaspoon nutmeg
ti teaspoon minced parsley
8 tablespoons fat, melted
I eg, yolk
t tablespoons sold water
H cup dried bread crumbs
4 tables poona salad oil
(olive Is fine)
Mix veal, Juice and seasoning.
Add fat and shape th meat Into
oak, about two Inches wide and
18 Inch thick. Mis yolks and waver.
Dip th cakes in the crumbs, egg
mixture and again In the crumb.
Brown quickly on both side in the
oil heated In a frying pan. Cover
and oook slowly 10 minutes,

8 cups Head peaches
18 cup granulat 4 sugar
14 cup flour
i teaspoon salt
3 g yolks
i'i cup milk
i teaspoon vanilla
teaspoon almond extract
. 1 egg whites, beaten
8 tablespoon confectioner's sugar
Mix granulated sugar with flour,
alt and yolks. Add milk and oook
In a double boiler until creamy be
careful not to over cook. Add vanilla
almond extract and peaches and pour
Into pi shell. Beat tb whites untU
stiff, add confectioner's wugar and
beat until creamy. Roughly spread
over th peach mixture and bake
10 minutes In a slow oven. Cool.
Broil tomatoes th usual way,
adding plenty of savory seasoning.
Arrant them on a platter and than
cover them with mushroom sauce.
This makes a fin luncheon, dinner
or supper dish, with salad, bread
and a light dessert you nave a
satisfying and quickly prepared aum
mer meal. And It's good for budget
troubles.
