Fruit Is Turned Into Maras

Medford district cherries are going
out this year on a far-flung journey
to dinner tablet in all part of the
world It waa disclosed today by Gor
don R. Green, division manager of
American Fruit Growers, Ine.
Up to this morning the company
had put up about 600 barrels of cher
ries at Its South Fir street packing
house, more being expected as the
Royal Anne season will last another
week, and the blacks considerably
longer, Mr. Green said. With the price
being five and six cents a pound net.
cherry growers here will receive a
total of about 13,000, he related.
The company will make little If any
profit from the cherry deal but it
came Into the picture to help the
growers because of the restricted out
let this year for an unusually large
crop, Mr. Green stated. He added that
the appreciation of the growers has
amply repaid the company for Its ef
forts to find new markets.
Many Uses
The company Is preparing the cher
ries for use In fruit salads, cakes. Ice
cream, candles and' cocktails. Many
will go ultimately to bakeries and ice
cream plants while others will be
bottled as maraschinos for home use.
When the cherries are received at
the company's brining plant, they
are weighed, graded and warehoused
until they are ready for barrelling,
Mr. Green explained. After they have
been warehoused the cherries are put
Into barrels and brine Is poured over
them. Any Immature cherries are
bleached clear by the brine but the
solution does not take the sugar and
color out of ripe cherries.
Much Processing
Allowed to set a day, the fruit Is
sgsln Inspected, this time in the bar
rels. Using long tweezers, Inspectors
pull out enough cherries to deter
mine whether the contents of the
barrel will pass Inspection. After
meeting requirements, the barrels are
tightly sealed and shipped.
The barrels are shipped to Califor
nia where later they will be unpack
ed, steamed, sorted again, pitted,
graded and cooked to remove the sul
phur of the brine solution. The cher
ries are next put Into 60-gallon drums
and shipped to caunera where the
fruit Is prepared for final market.

surplus now, the state "being out of

dustry so the state will not be de
pendent on agriculture, largely
through the use of Bonneville dam
power.
"We still have the very vexing
problem of timber land taxation
which must be solved." he said.
"We must arrange our timber tax
structure so that timber Is not
dumped on the market by owners
who can no longer afford to bear the
heavy burden of the present sched
ules, thereby causing a glut In the
market and a waste of our resources.
Lumber Control Needed
We owe It to our people who are
engaged In the logging and sawmill
Industries to provide them with con
tinued and permanent employment
that can only be assured by pacing
timber on a sustained yield basis."
He appealed for development of the
mining Industry by using cheap pow
er and building roads Into mining
regions, and said advertising and de
velopment of scenic attractions Is
sorely needed ao that the "tourist
crop." which spent 35,000,000 last
year, can b Incrrnsed.
