To cook bananas always watch

one best for its particular use. For
cooking . choose bananas In the
green-tipped or all-yellow stage ol

nana perfectly digestible, the pulp
Is firm, starchy and a little tart,
and cooking brings out that hidden
and different flavor which, makes
cooked bananas, In many guises, the
palate-tempting dishes they are. The
recipe for those delectable mouth
fuls, Banana Scallops, Is given be
low. Make tha most of these "go!
den opportunities" you can't make
too many!
Banana Scallops
Melted fat or oil cup fine corn flake
1 tie crumbs, bread or
- teaspoon! aalt cracker crumbs or
nanaa corn meal
For shallow frying have l-1nch of
melted fat or oil In frying pan.
' for deep-fat frying have deep
kettle to full ot melted tat or
oil. .
Heat fat to 375" P. (or until a 1
Inch cube ot bread will brown in 40
seconds). Beat egg and add Bait!
Slice peeled bananas crosswise into
1-inch thick pieces. .Dip into egr;
and roll In crumbs or corn meal.
Shallow fry or deep-fat fry In the
hot fat- lVi to 2 minutes or until
brown and tender. Drain on tin
glazed paper. Serve very hot,. Six
servings.
