coded at the Huber Packing plantto parchment-wrap all
meats in our super-sanitary retail markets all of these pre
cautions are not sufficient to insure uniform quality All iteers
are not alike even though the precautions listed above are
conscientiously followed.
To so control quality that the goodness of meats is uniform
it must undergo certain chemical changes the Sarco Loma
or muscle sheath must be broken down. That insures tender
ness. The fiacro Lactic aoid must be neutralized. That means
flavor and non-acidity.
To bring about these necessary changes the meat must
be held awhile in a cooler where temperature never ohanges
where no other meats or foods of any kind are stored It must
be closely watched because the same length of time is not re
quired to properly condition all meats. Ko regular holding
time can be set the meat must be passed upon by some one
who knows.
In our big holding cooler we always have at least 25 beef.
They are sorted daily and only those properly conditioned
are offered for sale.
