A customer asked us why we charged 25c
a pound for pork sausage and seemed a
little disappointed because we wouldn't
sell it for less. We suggested that she ask
the price of any cut of good pork. If good
pork could be bought for less, then and
then only could we make good pork sau
sage for less.
' Sausage is a good deal like mince
meat. If it is sold for less than the cost of
good quality ingredients necessary to
make it what's the answer? Frankly,
we 're too old-fashioned to know the
answer. W Earned to make sausage
years ago on a farm made it out of the
kind of pork we like to eat seasoned it
with good spices and liked it.
When we began making sausage In
our markets we sort of hungered for that
old-time farm sausage and made some. We
found it just as good as in the olden days
ind kept on making it. Maybe we're too
cranky, but we just can't help but be
finicky about all ground meats.
