Why, yes, you aay. There's chop
suey which is in fact a sort of family
name for dishes of a kind, like chow
der or stew la with us, says the Bu
reau ot Home Economics of the U. 6.
Department of Agriculture. "Chop
suey" is Ju.it 'pidgin English" for "a
variety of small pieces." It may not
contain exactly the same things any
two times you make it. But chop
suey, you see, does conform to the
rules of Confucius it has leas meat
than vegetables and everything la
cut in small pieces.
In a Chinese restaurant your chop
suey may be made of pork or beef or
chicken, as you request, with such
Chinese vegetables as water chest
nuts, lily root, bean sprouts, and
bamboo shoots. At home you can
make a good chop auey of pork with
celery, radishes, Jerusalem artichoke
If you can get It, onion and green
pepper (see recipe . The Chlneae
touch li the "primary soup, or the
Chinese (soy besn) sauce, or the
Chinese gravy (containing soy sauce)
with which the meat and vegetables
are cooked, and the peanut oil which
the Chinese use In place of butter
Two other important point in mak
ing chop suey are to brown the pieces
of meat and cook the vegetables only
a few minutes, so that try keep some
of their crlapness.
You can buy bean sprouts canned.
In some places they are quite cheap
But you can also grow your own
and they are worth the trouble be
cause fresh bean sprouts are quite a
"different source of vitamin C. That
Is an Interesting fact because the
dried beans, or eeeds, are practically
without vitamin C. Just aprout them
and you create a supply of this re -;
markable vitamin. This is one way
to do It: Sprinkle dried beans on !
wet cheesecloth, roll the cloth with ;
the beans around a stick about a 1
foot long, and put the end of thej
roll In water. Dampen the roll o-J-1
casionally. When the sprouts arej
an Inch long the beans are ready to I
use. Mung beans, which are the
sprouts used in cho'tf meln, need :

beans four to six days; pinto beans!

Pork Chop Huey.
IVj to 2 cupe shredded cooked lean
pork
2 cups shredded onion
3 cupa shredded celery
2 cups meat broth or thin gravy
3 oups sliced raw Jerusalem arti
chokes or radishes
1 green pepper shredded
4 tablespoons soy sauce
3 tablespoons fat
I tablespoon cold water
1 teaspoon cornstarch
Salt to taste.
Brown the meat lightly In half the
fat and remove from the skillet. Cook
the pup Pr and onion in the reat of
the frit a few minutes. Add the cel
ery, meat, salt, broth or gravy, cover,
and simmer for five minutes. Mis
the cornatareh and water until
smooth, stir into the mixture, an1
cook tor a tow minutes longer. Add
the artichokes or radishes, or substl
tute for them one cup of sliced Br.izll
nuts. Add soy sauce In sufficient
quantity to give the desired flavor
and then salt to taste. Serve with hot
flaky rice.
Bean Sprout Omelet,
4 eggs, beaten
2 oups bean sprouts
1 teaspoon salt
Pepper
H oup ham or bacon cubes, brown
ed. Add the bean sprouts and season
ing to the eggs. Pour this omelet
mixture Into a greased frying pan
and cover with browned ham or ba
con. Cook until set.
Boiled Rice.
1 cup rice
2 quarts boiling water
2 teaspoons salt.
Look the rice over to remove any
foreign materials, wash In hot water
using about three waters, and drain
Add the washed rice gradually to the
rapidly boiling salted water so boil
ing does not stop, Then reduce the
heat to gentle boiling, and cook un
covered until the rice grains are ten
der. Drain at once, and rinse by
pouring hot water through the rice
on a colander or sieve to remove loao
starch and separata the grain, Dram
The rice should be well-cooked but
whole and free from stickiness.
Reheat rice for serving by steaming
It In a colander or sieve over boiling
water, steaming only long enough to
heat through. Rice for two days'
servings can be boiled at one tlmo
and eailly reheated In this manner

Put cooked rice (boiled as direct

two of fat. Stir frequently until
lightly browned. Add chopped onion,
celery, bean sprouts, chopped meat, If

SCREEN VACATION
MAKES A CHANGE

HOLLYWOOD. Karen Morley, who
was too much in picture demand lor
her own good, left the screen two
years ago Just when she might have
crashed through to the stardom that
waa predicted or her.
She is back at the studio now, tak
ing up her career where she dropped
It, and she looks like a different per
son. In the meantime she has had
a baby, Charles Vldor, Jr., and token
a long rest. She is now decidedly In
favor of vacations and babies.
"I had reached tha point wbsra
nothing setmed new or particularly
worth while,' th$ confides. "I guess
r was taking everything for granted.
I waa entirely wrapped up in my ca
reer nothing else mattered. I macla
a mistake by trying to do too much.
When one picture was finished, J
could hardly wait until I started an
other, and as a result of tackling
more than I could handle, I waa Ir
ritable without realizing why."
The last time Miss Morley appeared
on tho screen until her return In
"Our Dally Bread" her second new
film Is "rour Walls" she was thin,
looked worn. Directors kept calling
for her for their pictures.
"Little things I should have laugn
ed off as being all In the day's work
would make me mad," ahe ssvm

tion for this, t was too busy, when

had never been in pictures although
m my subconscious mind I often
thought of them."
Absence from the screen enabled
her to get a better perspective of It
"Just as historians can write better

"While I was away, I thought about
my career, and saw where I was right
and wrong. Not that I know exactly,
but I was able to look at things and
weigh them,"
People tell her ahe has changed.
She doesn't doubt It. "Certainly In
two yeara time one can't help being
affected by what happened during
that time. But I doubt If the fact
that I had a child la what has brought
the ohange. The experience alone la
too commonplace and can be, In my
opinion, over atressed.
"If one is happy, he la bound to
be nicer and I'm happy.'
Marriage to Charles Vldor, young

circle of friends. Karen came from

from the European world. Friends, as
well as travel, can be broadening, she
finds.
Still she Isn't "dismissing" mother
hood. "One thing having a child has dons

camp but failed to give the mem
ber's name. After Captain Chaunccy
L. Pierce, camp commander, was un
able to Identify the person to whom
the letters were addressed, they were
left at the district headquarters In
Medford.
One letter contained a small sum
of money and both contained clip
pings from the Mall Tribune. Tney
were written from Jacksonville, The
writer may call for them at the CCO
welfare office In the old city hall
building, Medford.
