Know Your Beans Says
Home Economics Dep't
(By th Bureau of Home Economic,'
i 8. Department of Airiculture.)
Flva million pound of dried beam,
Juat bought by Hit raSsral Surplua
Relief corporation, are being dutrtt
uted through tat nd local relief
agencies to the famine on their roll.
Thl 1 another reminder of the raat
Importance of beana In the acheme of
human exlatenc. aaya the Bureau of
Home Economic of the V. 8. Depart
ment of Agriculture. Nutrition apec
Isllsta have a great deal to ay about
the food vslue of beana. The vry
name "navy" beana tell a atory about
'. the importance of beana aa food. Not
to "know bean" about something l
hacking became everybody doej know
bean m well. Bean of ome rt
grow in every part of the Inhabited
world and apparently always have.
BMtonlan. therefore, have no pri
ority a bean ester. All the world
eata bean and like them. And fo.'
the bet of reason. Tho bean family
1 unique among th vegetable in
food value. Beana can be uaed In
countless wav. Dried beam, un
cooked, can be kept Indefinitely, thsy
can be atored In mll paoe, or cs"
rled eaally by armlee, or on ahlp. or
on long expedition.
And. for tay-at-home or anybody
elae, bean are alwaya cheap. They
furnlh a lot of food value for the.
monev.
The commonest kind of dried beana
m the United State are whit pf-
beans. which we call navy bean;
Oreat Northern beana, grown chiefly
In the nothern and western states,
and pinto beana, which are grown
commonly In the outhwet and
mountain state. Theae are the kinds
the government 1 providing to rein
force the food auppllee of families
now on the relief roll.
The one big point In the cooking
of beana, a every housekeeper
knows, la the time It takea to get
bean "done." That I why. If you
have a cold place to keep them, you
oan economize on time by cooking
several daya" supply of bean at ones.
But bean contain so much protein
and so much fat they may spoil af:er
cooking If kept in a warm room over
night.
The cookery specialist of the Bu
srau of Home Economic list great
number of way to serve dried bean.
Boiled or baked, of course, or in soap.
But also scalloped with other things,
especially salt pork and onions, or
with tomstoes. Or you can use them
In a lost, stuffing for green pepper,
'in salad, in eandwlehea. Then there
1 Hopping John, which 1 a com
bination of beana and rice with which
you may like to aerve tomato auce
and cheese. And chill con came. For
variety you may like to add thin
slices of frankfurter to ordinary bean
aoup.
- A good combination of bean and
aalt pork la made thta way: Bosk
dried beana overnight, and boll thsm
until tender. Dice aalt pork and f.-y
It crlap. alio an onion and brown
In the fat, add the bean or peaa
with the liquor In which they are
cooked. If desired, add tomatoei.
Heat all to boiling, pour into a hal
low baking dlh, and bake until the
sauce thlckene.
Bean are excellent In meatless meals
' because they contain more protein
than any other vegetable and also
contain fat, besides their starch, their
minerals and vltamtna. Except In soy
beana, It la not the ssmo "complete
protein you get In meat, but It la
nearer to It than the protein from
any other vegetable.
Those are food values of the drld
beans the seeds of the plant. If you
tprout those seeds and you can do
It In your kitchen you develop a new
food value, namely vitamin C. Tou
also provide yourself with bean
sprouts for a salad. This la on wa?
to get green foods In winter time,
U pound salt pork, diced
3 medium sized onions, chopped
4 tablespoons flour
2 cups water
fialt and pepper to tasto
cup bread crumbs
Soak the beans overnight In wste:
to cover. In the morning sdd 2 cupi
more wster snd cook until tender.
Brown the salt pork and add to the
beana. Then brown the onions In
the aalt pork fat and add to the
beana. Mix the remaining fat with
the flour, atlr In the water, and mix
with the beana. Add salt and pepper
to taste and put the mixture In a
greased baking dish. Sprinkle the
bread crumbs over the top. Bake In a
moderately hot oved (3S0 to 400 deg
F.) for 30 mlnutea. Serve from tie
