an "All-American" Thanksgiving dinner.

The traditional turkey rules over this Thanksgiving teast, which has been given an "All-American" flavor by
Including dlshea characteristic of various sections of tne country. It begins with an oyster cocktail from Mary
land and runa a national course that ends up finally with pumpkin pie from New England on the way dipping Into
New Orleans' famed French cooking, vegetables from tri midwest, Hpanlsh food from 8an Antonio, a salad from
Oregon and dressing from Florida, with other regions contributing their shares.
Of Colonial origin are the cranberries, which oar! be served In Jelly, sauce or sherbet. California provides dates,
raisins and nuts as her offering. ...
RECIPES SERVINO EIGHT. !
. Maryland Cocktail,
1 pint small oysters
4 tablespoons chill aauce
1 tablespoon catsup
3 tablespoons horsersdlsh
y4 teaspoon Worcestershire sauoe
3 tablespoons lemon Juice
teaspoon salt
teaspoon paprika.
Chill the oysters. Allow several to
a serving and place In small glsss
cups lined with lettuce. Mix and
chll remaining ingredlenta and serve
on top the oysters.
Creole Soup.
6 tablespoons bacon fat
V cup chopped onions
V4 cup chopped green peppers
2-3 cup chopped celery
cup okra
4 cups water
a beer bouillon cubes
3 teaspoons salt
teaspoon paprika
4 cups tomatoes
4 tablespoons butter
4 tablespoons flour.
Heat fat In frying pan. Add and
brown slightly the onions, peppers
and celery. Add okra, water and bou
illon cubes. Cover and simmer
minutes. Add salt, paprika and to-1
rhatoes and simmer 30 minutes. Mix
butter nnd flour, add to soup and
cook S minutes. Serve.
Boost Turkey. Southern Style.
10-pound turkey
yA pound salt pork
14 teaspoon salt
13 celery leavea
1 cup water.
Thoroughly clean and wash turkey.
Rinse In cold water. Add atufflng and
truss. Cut salt pork Into thin allces,
make several gashes in each piece and
fasten with toothpicks over bresat of
turkey. Tuck celery leaves under
wings and legs'. Sprinkle with salt.
Place on rack In roastliut pan. Bake
20 minutes In very hot oven. Turn
turkey to allow even browning. Add
14 the water, cover and lower lire.
Roast three hours. Baste turkey every
la minutes, using rest of water to
which S tablespoons of butter has
been added. Remove turkey to serv
ing platter, remove salt pork and cel
ery, aarnisn Wlin parsiry.

4 cups soft bread crumbs
14 teaspoon aalt

1 teaspoon poultry seasoning
i cup butter, melted
3 tahlesnoons cream.
Heat fat In frying pan, add and
brown celery and onions. Mix well
and add to rest of Ingredients. Mix
lightly and stuff fowl.
Left-over corn bread at least one
dsy should be used for thai stuffing.
Oregon Salsd.

a cups water
1 cup sugar
6 whole cloves
1 stick clnnsmon
a slices lemon
Red fruit coloring
1 tablespoon granulated gelatin
4 tableapoona coid water.
Boll eugar and a cupa of water on
minute, add aplcea, lemon, sufficient
fruit coloring to give desired tint, add
the apples, which havt been peeled
and cored. Boll gently and turn ap
ples until well glased and very ten
der. Remove applea to shsllow flat
pan. Soak gelatin and cold water 6
minutes. Remove spires and lemon
slices from the syrup, heat to boiling .
and add gelatin mixture. Stir until
the gelatin dissolves. Pour over ap
ples. Chill until stiff. Cut mixture
into squares and arrange oh lettuce
on serving plates. With spoon scoop
out the centers snd stuff apples with
the celery mixture.
Celery Mixture.
2-8 cup diced celery
cup broken nute
cup dates
ft teaspoon salt
Mix Ingredients and stuff apples.
Top with dressing.
Florida Dressing.
cup orange Juice '
cup pineapple Juice
1-8 cup lemon Juice -
14 cup sugar
S tablespoons flour
14 teaspoon salt
4 egg yolks
3 tableapoona butter
4 teaspoon paprika
1 cup whipped cream.
Blend sugar, flour and salt. Add
egg yolka and fruit Juices. Cook In
