Merchandise - Is rapidly rising In

STORE OF BEANS
BEING CANNED BY
THRIFTY II
Fresh from tbe vines, into tin cans,
labeled and numbered and sealed
string beans $s traveling by a fart
route these 4ays in the Medford Arm
ory kitchen, where canning under
auspices of tbe Jackson county relief
committee la underway.
With Mrs. Louis B. Humphry V
chairman of the project, thousands
of beans are anapped each day and
sealed for winter consumption a
thrifty women from all sections take
advantage of the service offered by
the relief committee to aid them to
filling their larders for next winter
At noon yesterday tha total for
the preceding eight days had reached
3073 can and the Indications were
that the number would be swelled
by another 350 before the close of
the day's canning.
Each woman bringing beana to the
kitchen for canning and each Is ex
pected to bring in her own product
is given a card number, which will
be hers throughout the canning sea
son. She brings In the card with
her each time she returns to the
kitchen. Each la also given a can
ning number, which appears on every
can of beans she places in the pres
sure cooker, In order that a definite
check on each family's supply may
be kept.
The .canning service Is extended as
a relief measure exclusively, and only
those persons who have accepted re
lief from the county committee are
Included In the project.
It Is necessary for persons expect
ing to take advantage of the service
to register in advance, and proof of
the popularity of the plan Is realized
In the fact that every day next week
ts already filled. Anyone wishing to
can beans is therefore urged to make
appointment for the following week
as soon su possible. All are asked to
call M21. Humphry at 993-J.
La supervising the kitchen. Mrs.
Humphrys is assisted each day by
volunteer workers. The canners also
aid each other and .each is held re
sponsible for her own Man supply.
The beans must be supped at the
kitchen and all women ve warned
against snapping them before bring
ing them to the Armory. When this
la done the product Is not accepted
for canning. After tbe beans are
snapped at the long table In the
basement, they are taken Into the
kitchen and washed at the sink, then
placed In bleached sacks, which the
women also furnish. On the sack the
number Is placed, showing the owner
of the beans. The sack la then plac
ed In the boiler for 'bleaching of the
beans. Following the bleaching, each
woman transfers her beans Into cam
carrying her number. They are then
placed in the pressure cooker for the
final step in the canning process.
The work Is carried on systemat
ically and quietly In the kitchen,
with one of the workers operating the
sealer, while tbe others prepare their
beans and transfer them through the
various processes.
In addition to bringing tbe beans'
to be canned, each woman Is re
quired to furnl&b a kettle and
a bleached flour sack. The cans ate
furnished by the relief committee.
While the beans are cooking time
Is available for other work, and the
women are Invited to bring sewing
or mending with them to the Armory
basement, which Is unusually cool.
The canning begins at 8 o'clock in
the morning and Is continued until
the day's supply of beans Is sealed
and ready for removal from the
kitchen.
The committee plans to operate the
kitchen until the last of September
Following completion of the bean
canning, the tomato crop will be (pre
served. Ox-Cart to Airplane.

BREAD AND CAKES LIKE MOTHER MADE V'
8 AN ECHO FROM THE PAST
TOMORROW we roll back the scroll of time when our food journey
takes us to England's old time Midsummer festival one of the many
happy early English customs that earned for England the title of
"Merry Old England."
And what a festival it was with the Midsummer beauty of nature
augmented by her bounties the fruits the flowers the berries and the
early farm crops the world seemed bright indeed to these toil ridden peo
ple and the Mid-summer festival was perhaps even more joyous than the
Yuletide. ,
The crowning triumph of the feast concluding this long forgotten
old English festival has been preserved for us by a famous English chef.
Tomorrow we span the hundreds of years separating us from this old
festival and offer "Old English Bramble Cake".
