Dried and Canned Fruit
Needed for Winter Diet
ay the Bureau of Home Economics, i
U. 8. Department of Agriculture. I
In northern climates dried fruits
and canned frulta are money savers,
whether put up at home or bought
in the grocery. They are actually
cheap nowadays, and they are good
investment oecause they are protec
tive foods. They supply some of the
rood values of fresh fruits which may
be out of reach In price at this time
of year.
Of the dried fruits, prunes, apri
cots and' pesches are entitled to
special mention. When fresh all three
of these fruits are valuable for their
content of vitamins A. B, snd O.
Fresh aprlcata and peaches con
tribute some Iron to the diet.' Dried
fruit Is merely fresh fruit with water
taken out. After drying, prunes, apri
cots and peaches retain their minerals
and a considerable percentage of their
vitamin A. Prunes retain a good, pro
portion of their vitamin B also, and
pssches and apricot retain much of
their vitamin O If they are sulphured
before drying, as ususl, In the com
mercial drying process.
It Is In the cooking or dried rrun
at home tliM 'ood values are moat
likely to be lost, the specialists say.
To avoid this as far as possible, and
at the same time to get ths best fla
vor and texture, the bureau ot home
economics suggests: (1) Use dried
fruit uncooked when you can; (3)
If it Is to be cooked, shorten the
cooking time to allow the fruit merely
to become plump and tender; (3) u
tlie fruit Is soaked, cook It la the
soaking water: (4) serve the cooking
water (or sirup) wltn tne rruis.
Prunes and apricots can be used
without cooking If put to soak In hot
water and left until plump and ten
der. Dried peaches are best If cooked.
Soaking the fruit before cooking re
duces the cooking time, but It Is not
necessary to soak overnight. For
serving as stewed fruit, the flavor and
texture are better If the soaking time
is much shorter. Different lot of
fruit may require somewhat differ
ent treatment, but half an hour of
soaking in hot water will be found
sufficient, as a rule, for dried poaches,
and an hour for prunes. Dried sprt
oots need not be soaked at all. For
puddings and whips, hovever, where
pulp snd Jutoe are combined, the
fruit may be soaked for several hours,
or overnight, In order to mske the
pulp go through the colander more
easily.
Csnned fruit, aa well as dried
frulu, retain considerable of the orig
inal vitamin content. Apricots,
pesches and pineapple, among the
cheaper canned fruit, are sources of
vitamins A and O.
To make the moat of the flavor of
dried or canned frull, the bureau of
home economlca suggests eomblns
tlons with rice, with hominy grits,
with tapioca, with gelatin, or In
shortcske. For a simple, all-frult des
sert, dried prunes and apricot cooked
together are an excellent combination,
Aa a prune variation, a relish may be
made by simmering the prunes In a
spiced sirup to which vinegar has
been added.
Ralslna, of course, have countless
uses with oatmeal or whole wheat
at breakfast, In ssuce with ham, In
cookies and cakes of many kinds, as
well a In puddings and plea. They
add their flavor and their augar, and
alao a fair quantity ot Iron and other
minerals.
