Scrub the cucumbers clan then
dry them and plae In I large puj.
Sprinkle the salt over them. stlrrtJi
to get It thru evently, then covar
wlh boiling water and allow to stand
over night. In the morning remove
the brine and wipe the pickles dry
then lay them In a crock. Mix the
cup of mustard, salt and 1-8 cup of
sugar together well and blend with
the vinegar, sprinkle the mixed spices
over the plcklee and place the ginger
root on top then pour the vinegar
mixture over all. Stir well so that
each pickle Is lmmered. Set away In
a cool place. Each morning add one
harmful of the 3 lbs. -of sugar until
all Is used, stirring well each time.
Store In open crocks or seal. (These
keep their color well and are crisp
and delicious.)
.Jewish DU1 Pickles
Place fresh cucumbers In quart Jars
and to each Jar add
3 cloves of garlic
3 small hot peppers
3 bunches of dill
t powdered alum
Bring to a boil 10 cup of water
(43i quarts) with 1 .cup salt. Pour
over the cucumbers in the Jars and
seal. Set away la s cool, dark place
for keeping.
Bresd Butter Pickles
quarts of sliced cucumbers
t quarts of sliced onions
quarts of vinegar
S'.i c whits sugar
H c mustard seed
Vi cup celery sed
H mixed spices
K e salad oil
Make a weak brine of one-fourth
cup of salt to a quart of water. Corer I
the sliced cucumbers and onions with I
this brine and let stand over night.
Drain. Mix remaining Ingredients and
bring to a boll, add the cucumbers
and onions and bring to the boiling
point but do not actually boll them.
Seal In small Jars.
Watermelon Pickles
Remove the green sktn and ripe
pulp from watermelon rtnds then cut
In one and one-half Inch strips. Cov
er with one cup of salt and enough
water to cover. lt stand over night
then drain and cook In clear water
until tender. Make a syrup of 3 V v
lbs. eusar
1 qt. cider Ylnf?ar
8 drops oil of cinnamon
8 drops oil of cloves
1 T grain alcohol
(The oils and alcohol may be pur
chased at a drup store already com
bined.) Pour all over the melon rinds, boil
one and one hall hours slowly, then
seal.

100 small cucumbers
1 gal. mild vinegar
I c sugar
1 e salt
1 o mustard
3 t saccharins
Place the clean cucumbers In small
Jars, cover with the mixture of vine
gar and spices and seal.
