Eggs, Plentiful, Cheap
Boast High Food Value

all eventa. eggs are plentiful now.
Plentiful and cheap which la for
tunate this year, especially, aya the
Bureau of Home Economics of the
TJ. B. Department of Agriculture. For
all-round food value, eggo come next
to 'milk. They are richer In vitamins
and some minerals and their protein
la Just aa good. For calcium, which
la particularly Important to young
children, milk la the very best source.
The calcium of the egg is chiefly
in the shell, and therefore not avail
able aa human food. But even the
child that has plenty of milk Is bet
ter off If he has eggs, too.
The nutrients In the white of the
egg are chiefly proteins and vitamin
O. The yolk cqntalns proteins and
many other food subsMnces besides.
Vlt contains minerals of several kinds
phosphorus. Iron, sulphur, calcium
In addition to the calcium of the
shell, some of which the chick as
similates as bone-making material. If
the hen has the right food, the egg
yolk is a rich source of vitamins A
and D. Normally It contains also
vitamins B and O.
The presence of vitamin D makes
egg yolk especially Important as food
for children. This is the vitamin
that is necessary, along with milk,
for proper bone development and to
prevent the children's disease known
as rlekets. Egg yolk , Is one of the.
few common foods that contain vita
min D In considerable quantities.
The unusuafood value of eggs
makes then ari exceptional bargain
when prices are down as at present.
Eggs are a good main dish at any
meal. Or an egg dessert, such as
oustard, makes It possible to do with
a less substantial main dish than
would otherwise be needed. Egg salad,
egg sandwiches, sauces or salad dress
ing made with eggs all these add
materially to the food value of a
meal, and to the variety also.
As a variation from fried eggs,
poached eggs, scrambled eggs and
omelets, the bureau of home eco
nomics suggests baked eggs ' and
cheese, cheese souffle, eggs Creole,
shirred eggs on greens, curried eggs,
baked eggs and rice In tomato sauce.
Then for desserts, there la a rich
bread pudding. Fruit whips always
attractive and nutrltloua desserts
are Inexpensive when eggs are cheap.
They can be made of any fruit pulp
of pronounced flavor and color, but
prune and apricot whlpa are favor
ites. Heat the fruit pulp to dissolve
the added sugar, and combine while
hot with the stiffly beaten egg whites
so as to cook the eggs partially and
give body to the mixture. After tho
fruit pulp has been combined with
the egg whites and augar. the mix
ture may be baked If desired. When
baked In a dish surrounded by water
In a very slow oven (225 to 250 de
grees F.) for about one hour, the
whip should not fall, and may be
served either hot or cold. Or fruit
, whips may be served as soon as mixed
without cooking.

RECIPES
Shirred Eggs on Spinach.
1 pound spinach, chopped fine. '
cups dry bread crumbs.
teaspoon salt..
Pepper.
5 egga.
Vi cup grated sharp cheese.
Heat the spinach, stir, and cook
for about 9 minutes. Add the salt,
1 cup of the bread crumbs, and pep
per if desired. Spread, the spinach
In 2-lnch layer In a greased shallow
baking dish or pan. Break the eggs
on top of the spinach, and cover with
the remaining crumbs which have
been mixed with the cheese. Bake
for about 15 minutes In a moderate
oven (350 degrees P.) or until the
eggs are well set and the crumbs
brown. Serve at once.
Poached Eggs on Toast With Savory
Sauce.
Toast slices of breed. Place on
each piece of toast a thin slice of
crisp, cooked bacon, and on top of
this a poached egg. Cover with hot
sauce and serve at once. Make the
sauce with the bacon fat. milk and
flour, and add a little chopped green
pepper If desired.
Custard Bread Pudding.
1 quart milk
3 cups soft bread crumbs
cup sugar
teaspoon salt
3 tablespoons butter
1 cup seedless raisins
1 teaspoon vanilla
egga.
Scald the milk bread crumbs, sugar,
salt and butter In a double boiler.
Pour some of the hot mixture Into
the' beaten eggs, reserving 3 whites
for the meringue. Combine all the
other Ingredients, pour Into a greased
baking dish, ar.d set In a pan of hot
water. Bake In a moderate oven (350
degrees F.) for about I hour, or until
the pudding la nearly firm In the
center. When the pudding haa par
tially set, stir well so the ralslns will
be through the pudding, rather than
at the bottom of the dish. To make
the meringue add 3 tablespoons of
sugar to each well beaten egg white,
and add a dash of salt and vanilla.
Cover the pudding with the meringue
and put in a very moderate oven
(about 325 degrees F.) for 15 to 20
minutes, or until lightly browned.
Serve hot or cold garnished with bits
of tart red Jelly.
Eggs Creole.
2 tablespoons chopped onion
3 tablespoons fat
1 tablespoon flour
3 cups canned tomatoes
1 green pepper, chopped; or chop
ped parsley
Salt and pepper to taste.
Cut hard-cooked eggs In quarters,
place them upon a bed of hot flaky
cooked rice, and cover with a sauce
made of the Ingredients listed.
To make the sauce cook the onion
in the fat for a few minutes. Sprin
kle the flour over the onion and
quickly stir In the tomatoes and aim
mer for about 30 minutes. Add the
green pepper or parsley, salt and pep
per, and serve.

wrath against the move to extend
the Black 30-thour week bill to 36
hours. It killed the extension with
out showing Its hand.
Even Democratic Floor Leader Rob
inson knew nothing about the lobby
activities. He sponsored the exten
sion as a compromise. Without
checking he thought he could count
on his Democrats. When the roll was
called -he found be had been out
counted. He was short eight votes.
Trie labor boys had rounded up
their strength overnight.
A senator of 30 years' experience
said he had never seen such powerful
pressure exerted so swiftly.
A struggle Is on backstage to con
trol the kind of Inflation we are go
ing to have.
The administration la secretly nan
kerlng for a mild stimulant of a
public works bond Issue. The bonds
would be discountable at federal re
serve banks. The amount authorized
would probably start at ono billion
with a three billion goal in view.
The western boys In congress are
howling for a real shot in the arm.
They could kick up quite a fuss If
they ever got loose from the presi
dential reins.
You may have noticed a line In
the news about the house leadership
trying to change the rules The same
Democratic leaders who established
liberal rules last session now want
the power to control the minority.
Speaker Ralney led the fight for
the present rule enabling 146 mem
bers to force a vote on any Issue.
Now he is leading the move to re
quire 31B members, a majority. No
reason is given for this change of
front.
The real reason is inflation. These
new Democrats from the west are
restive. There Is no telling what
they would vote for In the way of
inflation If they ever had a chance.
The new rule Is to keep them from
having a chance.
The move Is belnj very carefully
staged. It Is being made a test of
party loyalty. The purpose Is being
mentioned by the leaders only to
the trusted few. Nevertheless there
has been considerable question
whether the leaders will be able to
get away with it.
The rank and file are In a mood
to assert themselves at tho first op
portunlty.
The Roosevelt gold restrictions
sent an unnecessary shiver through
some financial sources here. They
thought It was a trip that a really
strong Inflation was Just around the
corner.
It la true that if the government
planned immediate Inflation the first
thing it would do Is Just what Mr.
Roosevelt did call in all the gold.
But that was not the main Idea.
The inside of that la the govern
ment had bungled Its antl-hoardlng
campaign somewhat and was Just
correcting Itself.
Despite all you have been hearing
to the contrary, the government had
made no off total announcement
against gold hoarding before Mr.
Roosevelt spoke. The treasury had
not issued an official warning. That
was done by the federal reserve. The
big shots knew it had no power to do
anything. They kept their gold in
their socks and laughed In their
sleeves.
This technicality was not under
stood out In the country. There the
little shots came in with heir gold
on the run. They thought their
names were to be published.
The only way Mr. Roosevelt could
scare the fat boys was by Issuing an
executive order. It had the same ef
fect as electricity.

SMASHES AUTO
ABHLAMj, April 14. (SpL) One
of the highway construction trucks
figured in a rather unusual accident
this week when it lost a wheel which
rolled Into an oncoming car.
The truck, which haa dual wheels,
lost a wheel rod and one of the
wheels started on a Joyrlde down the
highway Just below the undercroas
ing. going at 40 or 60 miles an hour.
H. M. McAllister, of Ashland, was
driving toward Ashland In a Chev
rolet car and made an effort to avoid
the onrushlng wheel, but Just before
the wheel reached Mr. McAllister's
car, it hit a rock or a piece of dirt
on the highway and swerved, hitting
the McAllUier car head on.
, The car was severely damaged, but
no one In the car was hurt. Wash
burns and Hall, the highway con
tractors, are having the damaged car
repaired.

Instsllatlon has been completed oi
the police radio In the automobile
driven by Sergeant Jamea O'Brien ol
the. third state police district, and
tests given the set have already proven
that the, equipment will be valuable
to officers In this area.

especially reconstructed Into a police
radio by Will Claycomb of Wltham"s
Super Service atatton, and Sergeant
O'Brien expressed enthusiasm over
the exceptional work on the radio.

broadcasting stations Is clear and
distinct.
Sergeant O'Brlenlravels throughout
the entire third district In his work,
snd If at any time he Is wanted by
headquarters, such a message will be
broadcast over station KOPP, the
Portland police, and picked, up by
the officer.
The sergeant's automobile la the
only one In district three equipped
with a radio, and the practicality o:
the set Is to be determined by this
Instsllatlon.
Reports are clearly received over
the set, and the sensitiveness of the
dialing apparatus makes It possible to
obtain reports from vsrlous police
broadcasting units Operstlon of the
automobile engine does not Interfere
In any way with reception, Officer
