Apple Salad

1 can sliced pineapple
1 pound grapea . "

Dloe pealed applea and pour lemon
Juice over them to avoid discolora
tion. Cut pineapple In small pleoea,
aeed the grapes and cut the marah
mallowa Into thirds. Combine all,
aerve on lettuce leaf with fruit Juice
dreaalng.
Cinnamon Apple Salad

cup red cinnamon candlea
tart apples
Lettuce
Dressing
Make a alrup of the sugar and wat
er then add the candlea and atlr until
dissolved. Pare and core the apples
then oook them whole In the red sir
up, being careful to keep the apples
whole and basting frequently ao aa
to obtain an even red coloring. Cool
thoroughly and fill with grated
cheeae. Serve on shredded lettuce and
decorate with a teaspoon of whipped

1 cauliflower '

1 t minced parsley
H t minced onion
. Mayonnaise dressing
Steam the cauliflower until tender,
"drain and cool then break Into flow
erleta. Out the cooked beeta Into cubes
and chill. Add the minced paraley and
" onion to the mayonnaise. Place com
bined vegetable on lettuce leaf and
deoorate with the mayonnaise. Serve
Immediately to avoid, discoloration
from beets.
Carrot and Pineapple
i a grated carrot
. 1 a pineapple (pleoea)
1 a ahredded cabbage
1 eup Tokay grapea
t a ooooanut
1 a nut meata
Mil well and serve on lettuce leaf
with French or Fruit Juice dressing.
Plcnlo Salad
1 a baked beans
5 a minced cabbage '
1 small onion, minced
1 green pepper, mlnoed
1 T parsley, minced
. 1 a cooked macaroni
, M a sweet pickles, cut fine
H a cubed cheeae
1 t celery seed
1 a boiled dressing
Drain the beans and combine with
other Ingredient. Pack In Individual
waxed cupa and cover with paraffin

FISH SALAD
Salmon Salad
1 can salmon
1 eggs i
6 sweet pickles
1 cooked beet

Crisp the shredded cabbage in very
cold water, then drain and dry. Spread

The league got out of the red last
year, led by Bob Russell, league presi
dent, of Lincoln, former all around
athlete at the university of Nebraska.
Like the club presidents, he has had
no professional baseball experience,
draws no salary and expects no prof

"Well be happy If we pay all the
bills," he said, "but It a a lot of fun."

1 T lemon Juloe
1 e cream
1 green pepper
1 small can crab meat
Combine the ' tomatoes, cloves,
onion, celery seed,, salt and sugar and
simmer 15 minutes then strain and
add lemon juice and the gelatin
which has been softened In the cold
water for A minutes. Stir until thor
oughly dissolved and set In refriger
ator to cool until It begins to set. Re
move and beat with rotary beater
until frothy, then fold In the beaten
cream, the chopped green pepper and
the flaked crab meat. Turn Into a re
frigerator tray and chill until set.
Serve In squares on shredded lettuce
with mayonnaise dressing garnished
with lemon.
FRUIT JUIICE SALAD DDRBSSINOS
, Pineapple
Juice from one can of pineapple
(No. 3) .
8 eggs
1 c sugar
9 T butter '
3 T flour
Juice of 1 lemon
Bring pineapple Juice to boll. Beat
the eggs lightly and add the sugar
and flour. Pour the bolllpg Juice Into
this mixture, stirring constantly, then
place over boiling water to cook thor
oughly, adding the butter when about
ready to remove from range. Cool .d
Just before serving add the whipped
cream.
Peach
o sirup from canned peachea
a g yolk
1 T sugar
1 H T lemon Juice
Salt
Paprika
Scald the peach sirup. Beat egg
yolks until light colored, adding sugar
and seasonings while beating. Pour
the hot sirup Into this mixture and
cook over hot water until It thick
ens (coate spoon). Add lemon juice
slowly and chill before serving.
Paprika Dressing
H salad oil
1 cup powdered sugar
Juloe 1 lemon
1 T paprika
Combine all, beat well and serve
on tart salad.

the average Is 20 years. ,
In the big minors these boys have
done well, although they haven't
$800,000. Construction work on all
will start this fall and will be scat
tered over 13 counties in Oregon.
The awarding of contracts will be
the major business of the commis
sion, which starts Its session with a
preliminary meeting tonight. At least
half a dozen delegates will be present,
the program shows, but the depart
ment announced no other outstand
ing feature la scheduled.

quit and got Russell tc take charge
for another attempt. In one year the
obligations were liquidated but the
backers decided not to quit. '
"A baseball man will do things no
sane person would do," said Russell.

The annual Rotary picnic will be
held next Tuesday night, Sept. 0 ac
cording to plans outlined at Tues
day's Rotary meeting. The affair will
take place at the Hamilton Pat ton
home on Capital HU1 where ample
facilities are available for swimming,
dancing and other diversions. All Ro
tarlans and their ladies are urged to
plan now to attend.
Sam Veach, pioneer railroad man
was the principal speaker at the
meeting taking as his subject "La
bor" and speaking of present day
conditions as compared with years
ago. Mr. Veach who has been affilia
ted with the Southern Pacific rail
road since 1887 told a number of In
teresting things about hit early ex
periences with railroading and men
tioned sorn f tn problems which
confront the railroads today. Volney
Dixon acted as chairman of the
meeting.
The Southern Oregon Golf tourna
ment was announced by August

George S. Collins, the mayor's secre
tary said today Mayor James J. Walk
er Is 111 In bed .with nervous ex
haustion and had been ordered by his
physician to take a complete rest.
Collins said the mayor has made
no plans to return to Albany for the
resumption Friday of the hearing be
fore Governor Franklin D, Roosevelt
on the removal charges against him.
"Whether Mayor Walker may ask
the governor for a postponement,"
Collins said, "will all depend on his
condition."
