The diminutive cookery expert
made a real hit with the housewives
who attended the opening day of the
Tomemakers' Bureau cooking school
She la a former Oregon State girl and
Is considered an authority on home
economic.
Following one more school after
the Medford sessions. Miss Coates
will leave for an extended Journey to
Europe where she will study foreign
dishes.
Miss Coates will offer a number of
new dishes In the serving of typical
western fruit and vegetables and
take Into consideration the desires
for a pleasing variety without the
spending of too much time when she
lectures at the Fox Rial to theater.
One of the greatest problems of
the western housewife, according to
Miss Coates, is that of providing
foods for the family that are sus
taining yet not too rich and heavy.
Another problem of the homemak
er which Miss Coates characterises as
almost universal, comes from the lack
of meat knowledge. She believes that
1 only one out of every hundred wo
men can ask for a cut of meat by Its
correct name. One way she suggests
to learn the correct meat cuts la to
fo marketing personally, and lsam
to know the market man. She aaya:
"Make a friend of your meat mar
ket man and your meat bill will be
far less tor he will help you select
cheaper cuta and tell you ways of
preparing them so that they taste
Just as good aa the more expensive
steaks."
