WASHINGTON, March 31. UP)
Railroad loan y tat reconstruction
finance corporation were condemned
In the senate by Chairman Couzena
of the interstate commerce commit
tee. Pointing specifically to the recent
loan of tl3.800.000 to the Missouri
Paclflo railroad. Couzens aald the
market value of the securities- pro
duced by this railroad waa only ia.
450.000. He also called attention that the
reconstruction corporation adopted a
resolution approving the loan and
submitting It to the Interstate com
merce commission before asking the
formal approval of the latter.
Keluctant to Loan.
The commission then approved the
loan "with reluctance."
"I have no knowledge," said Couz
ena, "of congress having declared a
policy of government ownership of
the railroads, and yet the loan to the
Missouri Pacific and others have been
approved, and others still pending
clearly Indicate to me that if loans
are continued In the same manner
as they have been In the past, many
of these propertlea will eventually re
vert to the government or the gov
ernment will lost Its investment.
"The government will at least find
Itself in possession of the least de
sirable and least profitable railroads.
False Conclusions.
Couzens said the Interstate com
merce commission had approved many
fees charged by "money merchants'
for financing the railroads, on the
ground that they stood back of the
carriers and were of great value to
them. .
"This has proven a false conclusion
because they are not standing back
of them." Couzens said. "This Is par
ticularly true of the New York Cen
tral, considered one of the strongest
of the roads because It has had to
borrow M.399,000 In spite of the fact
that Morgan and company has always
profited to a large extent from II
nanclng It."
The Pennsylvania, Couzens said,
had also asked for a loan of 55,
000,000, which he called further proof
that the theory had not worked out.
Many of the railroads which have
applied for loans, Souzens added, have
not earned as much as 30 per cent of
their operating expenses during 1931.

the produce exchange whs not only
due. but generally forecast and ex
pected. Loss was lo for all except

Greatly Increased make of butter
has been shown latel. . The Increase
has been especially noticeable since
the first of the week and accumula
tions have resulted.
There Is no Improvement In the egg
market situation as a result of con
tinued direct selling by unattached
producers. Retailers are ahle to pur
chase most of their needs below
established values as a result which
weakens the entire trade structure.
Bearish operators in the live
chicken trade who appear to lay
awake nights to devise some new low
price for supplies, are now being made
to pay 1 to 2c lb. higher than the
quotations they list for light hens.
Market for heavy weight hens con
tinues to show good form. Demand
Is very good and receipt light. He'y
broilers are also In tall at lOnlX-i
but lights are hard to eep moving.

Portland's aerial sturiters, Tex
Rankin and Miss Dorothy Hester,
spent about a half hour at the Med
ford airport yesterday afternoon, en
route to New Orleans, La., where they
will be featured In the first annual
New Orleans air festival being staged
by Famous Pliers, Inc., Aprl 8, 9
and 10.
The two were flying In Miss Hes
ter's Great Lakes biplane, and ex
pected to reach Sacramento last
evening. Wiley Post and Harold
Gatty famous round-the-world fliers,
will Join Miss Hester and Rankin In
Los Angeles. They will be traveling
In the Winnie Mae.
The Portland couple carried Invi
tations for the national American
Legion convention In Portland this
summer.

an upward Jump during- March.
Arthur Benson, clerk of the court,
announced. From the usual num
ber of between 15 and 18 appeals,
the past month saw 33 appeals taken
to the higher state court. The in
crease was attributed to litigation
resulting from adverse busine con

Cheese American Cheddar cheese.
Cheddar cheese, or plain American
cheese, aa it la commonly known
la another of the good food bargains I
now on the market, according to
the bureau of home economics of
the U. S. department of agriculture. I
The retail price has not been so
low since 1904 It averages about
20 cents a pound now and cheese
la one of those concentrated foods
that can be used to make either a
good main dish of Itself, or to add
flavor and food value to any other
part of the meal, whether In soup,
meat, vegetables, salad, or dessert.
Cheese la made of milk; of the
low-cost cheeses, American Cheddar
Is made of whole milk, cottage cheese
of skimmed milk. Both are rich In
protein, calcium and phosphorus.
A pound and a quarter of Cheddar
cheese contains fully aa much pro
tein, calcium, and phosphorus as
a gallon of whole milk, and has
also fat and some of the vitamin
values of whole milk. In flavor
cheese ranges all the way from the
mildest of the Wisconsin varieties
to the sharp cheese which is more
typical of New York manufacture
Wisconsin producing about two
thirds of all the Cheddar cheese
manufactured In the United tSates.
and New York much more than any
of the other states.
Onion soup with cheese Is a whole
meal In Itself. Cheese fondue, made
with a pound of cheese, a pint of
milk and two cups of bread crumbs,
can be served as a very cheap main
dish for the family dinner. Cheese
crackers made by grating cheese
on crackers and toasting them under
the oven flame can be used with
potato or apple salad, or other
vegetable or fruit salad, to make
the Sunday supper. Tomato rarebit,
Welsh rarebit, cheese with tomatoes
and rice, cheese souffle, cheese with
macaroni and tomatoes, cheese fon
due, cheese scalloped with cabbage
and spaghetti, cheese with potatoes,
with corn, with hominy or hominy
griU. cheese In rice croquettes,
cheese sliced or made Into a spread
for sandwiches, cheese with any
thing, almost, will add both to the
flavor and food value of the meal.
Many people do. of course, raise
a question about the digestibility of
cheese. Food scientists say, how
ever, that the discomfort which
sometimes follow the eating of cheese
la probably largely the result of the
"unsuitable way In which cheese
la often eaten aa at hours other
than meal times, or at the end of a
meal already sufficient. When eaten
at a rational place In the meal and
i thoroughly chewed, cheese usually
Is well digested." To this the bu
reau of home economics adds the
KUMjrstlon that the method of cook
ing the cheene has much to do with
Its digestibility. Orate or flake or
shave the cheese, or cut It In small
pieces, and distribute these through
the other Imrredlenta of the cheese
dth the bread crumbs, the spa
ghetti, the vegetable, as the case
may be and cook at very moderate
temperature. Then. ay the recipe
specialist, the cheese has no chance
to form the leathery mass which is
so slow to digest.
Cottage cheese can easily be made
at home (the dpartment of agri
culture has published a farmers
bulletin 14M-P. making and using
cottage chee In the home, which
Is free for the asking). Many peo
ple like cottARe cheese served by
itself in the main part of the meal,
seasoned with salt and Mended with
a little milk f cream if possible)
or with sour cream or melted butter
It makes an attractive and nutri
tious salad, and Is the basis for
sandwich fill In as. combining nicely
:with many kinds of frulta. fresh
lor dried, with ereen peppers, carrot,
cabbage, or other crisp vegetables

Onion Soup.
6 medium sized onions, chopped
a tablespoons butter
I pint boiling water
1 quart meat broth
4 tablespoona flour
4 tablespoona cold water
Salt to taste
Pepper
Toast
Cheese, finely grated
Cook the chopped onions In the
fat until yellow, add to the hot
water, and simmer for 20 minutes,
or until tender. Add the meat
broth. Blend the flour and cold
water, add some of the hot liquid,
mix well, and stir Into the soup.
Add the salt and pepper, and cook
for a few minutes. Pour the soup
Into bowla or aoup plates, place
on top of each a slice of toasted
bread, sprinkle the cheese over tne
bread and soup, and serve at once.
Cheese Fnndue.
(Without egg)
1 pint milk
2 cups fine dry ..bread crumbs
1 pound aoft cheese, flaked with
fork
teaspoon salt
1 small onion, grated
Whole wheat toast.
Heat the milk in a double boiler.
Add the bread crumbs, cheese, salt
and grated onion. Stir until the
cheese has melted. Serve on toast.
8 ra Hoped Cabbage, Spaghetti and
Cheese.
1 14 cups spaghetti broken In small
pieces
3 tablespoona flour
3 tablespoona butter or other fat
3 cupa milk
1 teaspoon salt
14 pound American cheese
1 quart shredded cabbage
1 cup bread crumbs.
Cook the spaghetti In boiling aalt-
ed water for 20 minutes, and drain.
Make a sauce of the flour, fat, milk,
and salt. Shave up the cheese, add
to the hot sauce, and stir until
melted. Put the cabbage, spaghetti,
and sauce in a greased bsklng dish
in layers and cover the top with
the bread crumbs. Bake for 20 to
30 minutes in a moderate oven,

I Remove the stones from cooked
prunes. Stuff the prunes with cot
tage cheese which has been sea
soned with salt. Serve on lettuce
leave with cooked salad dressing
Date or figs may be used instead
of prunes, if desired.

Seasoned cottage cheese balls
served on a slice of pineapple, make
a delicious salad with cooked dress
ing. i With green pepper
Remove pulp and seeds from a
green pepper. Stuff pepper with
cottage cheese, seasoned with salt,
or a lltti onion may be added to
the cheese. Let the stuffed pepper
stand in a cool place for one hour,
illoe. and serve on lettuce leaves.
