Milk is needed by so many dishes that Carnation milk becomes an important aid, both for Its richness and for Its economy, Soups, creamed vegetables, baked dishes and heavier desserts can now begin to replace the lighter and more cooling courses of the summer months. Here are some recipes found especially adapted for fall. Cream of Tomato Soup 1 can of tomato soup 1 tall can of Carnation milk Heat the milk and the tomato soud separately, watching carefully to prevent scorching. When both are piping hot (not boiling) and you are ready to serve, pour the hot tomato1 Into the hot Carnation and serve Im mediately. To avoid curdling be aure to pour the tomato Into the milk In stead of vice versa. Do not combine the tomato and milk until ready to serve as these snouia ne neawa sep arately. This makes a thick and de- Uclnua roup, serves 4. Creamed Chipped Beef lb. chipped beef 2 tbsp. butter SV4 tbsp. flour , Pepper 14 tsp. salt cup Carnation milk cup water Bhred the dried beef, cover with hot water, let stand 10 minutes, then drain. Make a white sauce of the but ter, flour, seasonings, and Carnation diluted with cup water. Add the ehlDDed beef and serve on toast points or with mashed or baked po tatoes. Serves 4. Chicken a la King 2 tbsp. butter of cbloken fat green pepper, shredded cup mushrooms, chopped 3 tbsp. flour 4 plmlento, shredded 1 cup cbloken broth 1 eup Carnation milk Salt and pepper IV. cun cold chicken Saute the green pepper and mush rooms In the butter until tender (about 10 mlnutea), keplng them covered while cooking. Remove the mimhrnoma and censers and blend the flour and seasonings with the fst left In the pan; then add the broth and Carnation and cook until thickened, stirring constantly, place the chicken, cut In' Y, Inch dice, pl mlento, green pepper, and mushrooms In top part of double Doner. Four over this the sauce and continue cooking over hot water for 10 min utes. Serve In patty shells or on toast points. Serves 0. Corn Souffle g tbsp. butter 4 tbsp. flour 1 tsp. salt (4 top. pepper yA tsp. celery salt ' ft cup Carnation milk H cup water cup canned com a tbsp. chopped plmlento 8 eggs Make whlta aauoe of the butter, flour, seasonings, and Carnation di luted with the water. Add the ram, plmlento, and beaten egg yolks. Fold In beaten egg whites and pour Into buttered baking dish; bake In a alow oven until firm (about 30 minutes). Serves 5. Stuffed Baked Potato 6 medium sized potatoes a tbsp. butter 1 tsp. salt 14 tsp. pepper 3 tbsp. Carnation milk a tbsp. water I egg white a tbsp. grated cheese '' Bake potatoes In a hot oven for minutes or until soft. Remove from oven and cut off the top third of each; then scoop out Insidea. Mash potatoes, and seasoning, and then the Carnation and water heated together; beat well; add egg white well beaten. Refill potato shell; sprinkle top with grated cheese and put Into a hot oven to brown. Serve at once. Servea 0. Orahnm Date Muffins 1 cup bresd flour 1 cup graham flour 4 tsp. baking powder 3 tbsp. sugar tsp. salt 16 cup chopped dates a tbsp. melted fat - 1 egg 1-3 cup Carnation milk 3-8 cup water Sift the bread flour, baking pow der, augar, and salt and add to the graham fkmr; add the dates. Beat the egg and add Carnation diluted with the water; add melted fat. Stir liquids quickly Into the dry Ingre dients. Pour Immediately Into oiled muffin tins. Bake 20-2S minutes In a hot oven (429 degs. P.) Makes 12 muffins. Pumpkin Pie cups steamed pumpkin I eup brown sugar 1 tsp. cinnamon 1 tsp. ginger 9 tbsp. orange Juice V, Up. sslt a eggs 1 cup Carnation milk , Va cup water Mix materials In order given and pour Into an unbaked pastry shell. Place In a hot (490 deg. p.) oven to set the crust. After 10 minutes re duce the temperature to 260 degs. P. for the rest of the period. Bake about 1 hour. Makes 1 pie. Lemon Rice Cream Vi cup rice cup sugar 14 tsp. salt . 1 cups Carnation milk 1 cups water Orated rind of 4 lemon a tbsp. powdered sugar 31,4 tbsp. lemon Juice 3 eggs !4 up. lemon extract Wash rice and soak In cold water for an hour. Drain, put Into doublo boiler;, add the Carnation diluted with l"4 cups water; add aalt and cook until rice la soft. Add sugar, lemon rind,, lemon Juice, and egg yolks slightly beaten. Cook until It thickens, about 6 minutes, then turn Into a butured baking dlah, cover with a meringue made from egg whites, powdered sugar, and lemon ! extract. Put In a slow ,(300 degs.
