Sauerkraut Is
Low Cost

for making sauerkraut the bureau of
home economic of the TJ. 8. depart
ment of agriculture calla attention to

manufactured product rangu In price
from about 0 to 100 a quart, depend

J hulk or In cane. The homemade pro-
- duot coeta even leas. Since one quart
' of aauerkraut la sufficient to serve
five persona. It la a very Inexpensive
- vegetable.
Moat persona think of aauerkraut aa
- native to Germany. But the more
I probable origin waa among the Slavic
. peoples of eastern Europe, who In
turn Introduced It into northern and
. Central Europe. The Germans, how
ever, aeem to have been the first to
develop efficient methods for Its pro-
, ductlon and to atudy the processes
Involved In Its fermentation. For
aauerkraut la no mare than shredded
cabbage that baa undergone lactic
fermentation In the brine made from
Its own Juice by the addition of aalt.
Bauerkiaut la wholesome and epe
tuslng. It la valuable, primarily, aa an
' additional leafy vegetable product
for winter when the diet of most per.
sons consists too largely of concentra
ted forma of food. Because of chem
- leal changes which take place In the
process of fermentation the flavor la
: oecldedly different from raw cabbage,
In fact, many persons find aauer
kraut the more palatable of the two
for this reason. Sauerkraut has little
nutritive value as measured by cal-
orles but It supplies several of the es
sential minerals necessary for human
nutrition.
Sauerkraut does not furnish as
much of vitamins A, B, and O as raw
cabbage. But It Is a fair source of all
v three of these elements which are
- essential for resistance to bacterial
Infection and for maintenance of ap
petite and growth.
Sauerkraut suggests pig's knuckles,
spars ribs, and frankfurters, but
there are other uses for this appetis
ing food, the bureau points out. It
may serve aa a basis tor a one-dish
meal such as Is listed In today's
menu. Combined with cheese and left
over mashed potatoes It makea a sat
isfying and low cost dish that la eas
ily and qulokly prepared. Savory
sauerkraut Is msds by beating a
quarter of a cupful of fat in a skil
let and then adding a quart of aauer
kraut and one-fourth of a teaspoon
of celery or caraway aeed. This is
mixed well and covered while being
cooked for flvs minutes.
Sauerkraut can bs caaked In cas
serole with alternate layers of nood
les and a top layer of ground pork
aauaage. It may alao be tried or com
- blned with bacon, ham, or any oured
meat. Whan potatoes are to be com
bined with aauerkraut It le better 'o
precook them separately be cause the
acid of the kraut Is likely to make
the potatoes a trifle hard. In some
sections of the south, sauerkraut is
always served with turkey while In
Europe It steps out of ths modest
tola, so ottsn associated with It here,
to serve aa the accompaniment for
partridge, pheasant, goose liver pat
ties, liver dumplings, fried liver and
baked pike.
For those who may wish to utilise
ths surplus cabbage by making aauer
kraut at horn there are two depart
ment publications which are avail
able for ths aaklng. These are "Mak
ing Fermented Pickles," "Fanners'
Bulletin H3B-F;" and "The Commer
cial Production of Sauerkraut," Cir
cular 35-c, The first of these contains
all the formation essential tor mak
ing sauerkraut at home while the
second goes Into greater detail necas
aary tor putting the product on the
market.
Almost any variety of cabbage may
be used for making sauerkraut but
ths alow growing and solid-headed
varieties are preferable. The oabbage
ahould be fully matured before it la
cut, otherwise the product will show
defects In color and texture.
Stone Jare make the beet con tain

home. Alter the oabbage la shredded,
It la placed In the Jars alternately
with the aalt In the proportion of
on pound of aalt to every 40 pounds
of cabbage. The oabbage ehould be(
packed firmly In the Jar, covered
with a clean cloth and a board or
plats on which la placed a weight
heavy enough to cause ths brine to
come up to the cover.
The Jar ahould be kept at a tem
perature of about 80 degrees P. so
; that fermentation can take place, a
process which requires about 10 days.

many persona think It la. If It can be

of the Jar Is about 160 degrees F. and
is them stored In a cool place.

RECIPES
Baked Sauerkraut with Cheese
1 small onion, chopped
8 tablespoons bacon fat
-1 quart sauerkraut ' .
1 teaspoon salt
1 pound American cheese (flaked)
8 cups mashed potatoes
Brown the onion In the bacon fat.
add the drained aauerkraut and one-
half of the salt, and cook until the
aauerkraut la allghtly browned.
Combine the cheese with the hot
potato and beat well, adding the reat
of the salt. Make a layer of the hot
kraut In a greased baking dish, then
a layer of the cheese and potato mix
ture, Continue until all Ingredients
are used and have a layer of the po
tato on top. Bake In a moderate oven
until lightly browned, or about 30
minutes. .
Cream of Vegetable Soup
3 tablespoons finely chopped ruta
baga turnip
i tablespoons finely chopped car-
. rota
3 tablespoons finely chopped onion
'3 tablespoons finely chopped cel
ery 3 tablespoons melted butter
1 tablespoon flour
1 quart of milk
114 teaspoons salt
' Cook ths finely chopped vegetables
In the fat for 10 minutes, add the
flour, end stir until all are well
blended. In the meantime heat the
milk In a double boiler, add a little
of It to the vegetable mixture, stir
well, combine with the rest of the
milk, add the aalt, and cook for 10
minutes.: The flavor -ts Improved If
the aoup la allowed to etand for a
short time to blend before serving.
Reheat and serve.
Savory Sauerkraut
1 quart of sauerkraut
14 teaspoon celery or caraway aeed
Yt cup butter
Heat ths butter In a skillet until
golden brown, and add the kraut and
ths seasoning, Mix well using a fork
to separate the kraut. Cover and
cook for five minutes. Serve hot. -
Harvard Beets
0 medium sired beets
cup sugar
1 teaspoon cornstarch
yt teaspoon aalt
V, cup vinegar
3 tablespoons butter
Wash ths beets, cook them In boil
ing water until tender, remove the
skins and out the beeta Into thin
slices or cubes. Mix the sugar, corn
starch, and aalt, add the vinegar, let
the aauce boll for 0 minutes, stirring
constantly. Add ths fat, pour the
sauce over the beets, and let stand
for a few minutes to absorb the
sweet sour flavor of the aauce.

Bright reds, blue and greens, have
given way to brown and heather mix
tures blending with the autumn col

Coata are often unturred, designed
with snug scarf collars and roomy
