v FOR GREENS
Salads made with' light, rimplc
grecnj like lettuce and endive, seem
ta find their . ideal complement in
dressing like French Dressing,
Bachelor Club Dressing or Vinai
grette Dressing.
. To Snake Vinaigrette Dressing:
Mix one teaspoonf ul o salt, one
.. teaspoonful of sugar, one-quarter
teaspoon of pepper, a little paprika,
twelve tablespoonfuls of Wesson
Oit and three tablespoonfuls of
vinegar. Beat with a fork until
thoroughly blended. Stir in two
.tablespoonfuls of finely chopped
dill pickle, and one teaspoonful of
chopped parsley.
FOR FRUITS
Fruits, either fresh or canned, with
their full, sun-ripened flavors do
not go very well with the kind of
dressing appropriate for salads made
with vegetables or greens. They
suggest a dressing made with nuts
: cr cheese ... or one to which a
touch of sweetness has been added.
One of the most appropriate dress
ings yoif can have for your fruit
aalad is a Bar-le-Duc Dressing.
To. make Bar-le-Duc Dressing:
One. teaspoonful of salt, one-eighth
teaspoon of white pepper, one-quarter
teaspoon of paprika, six tab c
poonfuls of Wesson Oil, two table
spoonfuls of lemon juice, and sax
tablespoonfuls of a jelly that is not
too firm .. . such as Bar-le-Duc.
Beat mixture with a fork until
thoroughly blended.
FOR SEAFOOD
One of the salads that everyone
seemi to enjoy i a salad made with
seafood . . . shrimp, crabmeat, or
lobster. You will find them even
mom Hclicious if vou marinate the
seafood in French Dressing before
. making it into the salad. Mannat
Jr flavor and firmness,
tn restore all the zestful
. tane that makes us like seafood so
well.
Tn marinate: Mix twelve table-
..wmfiilt of Wesson Oil and three
tablespoonfuls of vinegar. Add one
teaspoonful of salt, one-quarter
teasDoon of pepper. Pour this ovet
,fi iidc in the reins
erator for several hours. Serve with
Lemonaise (mayonnaise made with
lemon juice.)

Even the finest furicoat would be out of place
at a garden party in June. There is a time and.
place for everything . . . including salads and
salad dressings. So many different things come,
to our table as salads, no one dressing can be.
used on all of them. There is an appropriate
salad for every occasion and an appropriate
dressing for each different kind of salad. So . . .
mix a dressing
appropriate - to; the salad
Salads made of light greens or vegetables go
best, with a tart dressing like Vinaigrette Dress
ing, French Dressing, or Bachelor Club Dress
ing. Fruics, on the other hand, respond best
to a bland dressing . . . one made with cheese
or flavored with a touch of sweetness. Seafood ,
should be served with Lemonaise (mayonnaise
made with lemon juice). But first it should
be marinated in French Dressing.
Mary B. Murray has wriuen a little book
on appropriate salad service. You will find it
very helpful in selecting the salad dressing ap
propriate to each different-kind of salad. , It ,
contains many helpful suggestion and ideas
for modem salad service. We would like to
send it to you with pur compliments. Addresi
