I'iickuge plant, manufacturers of
butter tab staves here, has an
nounced at its Chicago office, tho
beginning of a $30,U00 improve
ment plan, which includes tho
construction of a new kiln, new
cooling shed and refuse burner,
largo swing log cutoff saw, instal
lation of other new equipment and
material repairs to 'their power
plant. The contract for tho con
struction of tho burner was let
' this week to tho Seattle boiler
works. Power house repairs were
let to John Murphy of Portland
and John Yasek of Toledo will
piovklo tho piling upon which tho
new buildings will bo placed.
The new swing saw, which will
out off a 16-inch block easily, will
bo D(i Inches in diameter the
largest of its kind in western Ore
gon will cost $2,000.
Tho additions are being mado
in order that the capacity of tho
plant may be increased so as to
include the manufacture of tho
complete tul) tops and bottoms,
as well as staves formerly manu
factured. Tho post month was an
nounced by C. P. Cooper, man
ager, Chicago, as bringing his
company the best butter tub busi
ness in its history, and is an in
dication, Mr. Coopor believes, of
better times in prospect. Only
.local labor will be employed in

EVERYONE who has tho task of
planning family meals knows

served too frequently. Yet, the
success of a dinner featuring meul
depends less upon mere cost than
does virtually any other typo 01
meal.' One of the most encouraf
ing points about meat cookery is
the fact that a little Ingenuity em
ployed in seasoning and preparing
even the cheapest cuts will afford
a pleasing variety of highly palata
ble dishes.
These savory meat dishes whose
success is assured by their season
ing may take a variety of forms.
Some housewives prefer the J'One
dish" or "Oven dinner" typo,
where the Ingredients are prepared
several hours in advance of the
meal nhd then subjected to Ion;:,
slow cooking. Others favor the
quickly-cooked style, that may be
prepared quo1 all ready to serve lu
considerably less than one-half

the number of such meat dishes is

Chili Sauce, Worcestershire anil

licious dishes that will delight the
entire family. Below are just a
few tested recipes that will show
you the possibilities for serving de
lightful meals on even a brlelfot
budget.
Braised Beef with Vegetables :
2 lbs. beef from the round or shoutdrr:
salt and pepper: flour: 1 cup diced car
rots: 1 cup diced celery; J cup diced
inlons; 1 cup diced turnips; 3'a cups hat
water; la cup Tomato Ketchup; whole
notatoei.
Sprinkle beef with salt and pep
per, dredge with flour, and brown
quickly in fat. When turning tho
meat, avoid piercing It with the
fork, as this allows tho juices to
escape. Place in a casserole or
deep pan and add carrots, celery,
onions and turnips. Mix hot water
with Tomato Ketchup and pour
mo3t of this liquid around the meat
and vegetables. Cover closely and
hake for 2 hours in a slow oven
325 degrees F. basting every half
hour with the remaining liquid.

Brown beef in a skillet with but
ter and onion. When the meat is
browned, add Kidney Beans, To
mato Soup, and salt to season, and
cook for IS or 20 minutes, stirriug
occasionally. A small Amount of
Chili Powder may he ndded if do
sired. Servo with boiled rice or
baked potatoes.
Veal Bird' Ibs- v" cutlet, sliced

bread or cracker crumhs: salt and pt-ppcr;
onion Juice; ' Worreftershire Sauce; l

up. Cut veal into pieces about 4
Inches long and 2 inches wide.
Chop the trimmings from tho meat,
and add lo them an equal quantity
of chopped bacon and bread or
cracker crumbs. Season highly
with salt, pepper, onion juice and
Worcestershire Sauce, moisten with
beaten egg, and spread each piere
of meat with this mixture. Then
roll and tio with a piece of cord or
fasten with small wooden skewers.
Sprinkle with salt and pepper, roll
In flour and fry in a skillet in hot
butter until a golden brown. Add
cream or thin whiter sauce to half
cover tho meat, stir in Tomato
Ketchup, cover, and simmer or
hake for about 20, minutes. Remove

crust, and bake in a hot oven for
